People, remember that "crushing" doesn't necessarily mean "to turn flat like a pancake"!
People with injuries from crushing often get back to normal functioning later. The crushing might only turn the organs/limbs useless at the moment, but after healed, they start to work again. Obito's body being "crushed under a giant rock" doesn't mean he lost those body parts for ever.
There are victims of earthquakes that get buried under tons of concrete for days and still get back alive, I think it's premature to give a final status to Obito after being under a big rock. What I think it's definite, is that he was severely injured and was left to die after being buried. That's likely death considering he was on enemy ground, but the injury itself, although lethal if untreated, wasn't as final as it was shocking!
