Pluto can be made into a good one I'm sure.

-NGE: Campus Apocalypse. Out of all the spin-offs of the series, this has to be my favourite.

I also would like to see the further volumes of Durarara!! animated, along with Baccano, Vamp! and Etusa Bridge. Maybe Final Fantasy VII Before Crisis, On the way to a smile series because the series isn't overrated enough.
For me is these series:
Lucifer and the Buiscut hammer: The first seinen I've ever read. and I loved every page of it!
Animal Land: After a sizable amound of chapters are released of course.
Psyren: with a new orignal ending, and make it FMA like. people love FMA like endings.
Tonari no seki- kun: could make a fun five mintue or less series.

It's a completely series, that I feel like not many people know about but would be absolutely perfect for an anime adaptation.
A love story between a hero sworn to kill a demon lord and a girl that fell in love with him who joins him in his travels; who, unbeknownst to him, also happens to be the very demon lord he's looking for. Give this story to any halfway decent animation studio (meaning anyone but Studio Pierrot:-_-) and it seems to me like it could be just amazing.

I think I really wanted another Inoue's works made into Anime, either Vagabond or REAL. Though I can say that the Anime would not be able to do justice to Inoue's drawing. Another Manga that deserve Anime : Hoshi no Samidare, Vinland Saga, Silver Spoon and Yotsuba&. The sad thing is that I heard that Yotsuba& won't happen because the Author himself refuse the anime adaptation.
well from the old manga's i would really like to see lone wolf and cub. i wouldnt mind if it is just made an movie, good story good action it would be great.
dengeki daisy, would also made a good story but it might need a good team to actually do it justice.
Liar game, made into a drama and movie but i would like to see it animated.
Until Death Do Us Apart; has enough chapters to warrant for an anime i believe.
Iris Zero: adter it reaches 40ish chapters this might also has some life in it. at the very least can be made 12 min long.
@doraku also mentioned other great series so no need to rewrite them. have to agree about real and vagabond thou and shame that azuma doesnt think yotsubato is animetable (is this a word???? :) )
It would be great if Kyoukai no Rinne gets adapted into an anime, and I'm actually surprised that it never got any offers yet tbh. :o
I know that there's the whole issue of a Rumic anime adaptation ending before the manga does, but the studio can afford to add fillers if they wish since the story is (so far) an episodic case-by-case one. It doesn't need to have an indefinite length as well; it can work as a 26 episode series.
OMG, Someone else who reads Rinne! :wtf I agree! I think it would do well as an anime. I find it really funny and original. They would have to the ones with Ageha and Rinne's dad, those are just amazing! Rinne is severely underrated and its just such a breathe of fresh air after the emotional mess Inuyasha was.
The only manga i read.... ENIGMA!!!! and Battle Royale, and Parasite. These should all be anime.
I Am A Hero, Dorohedoro, and Saint Young Men deserve proper adaptions more than any other :p
Also, anyone else think it's time for a Gantz remake? Maybe by a different director...
It was alright up until the made up ending. I would really like a new anime which captures the vampires and Izumi in all their glory, since the film adaptation failed MISERABLY in doing this.
Battle Royale for sure, it deserves one and I'm certain it will get one eventually. Hopefully minimal censorship of Mitsuko too lol.
What about the horror manga Uzumaki? There has been a film adaptation but I think an anime series could cover the story fairly well, since it consists of short stories (with all bringing the overarching plot forward).
Steel Ball Run (JoJo's Bizarre Adventures) would also make for a fantastic anime series.
