Just buy a dictionary and read, so you can search the kanji you find on the way. or search by rankings of frecuency.
I always recommend Kodansha Kanji Learners Dictionary. There you have 2200...

On my dictionaries, entry for 糞:

As for the first, from context, I think the シメる intended was this: http://zokugo-dict.com/12si/simeru.htm
I'm not sure but「いっぺんシメとくか」(~とく is ~ておく) could be like "do you want me to kill you?"-ish...
