Aizen believes White decided to Hollowfy Masaki, a Quincy, instead of a Soul Reaper. This is going to be fun.
People really nitpick Bleach more than other mangas.....I mean now we're having a debate over whether or not it's a plothole that a Hollow bit a human? Really? Hollow's have always been biting people, shinigami or human.

When you know that comic book artists spend hours putting intricate details into drawings, they are not done impulsively or without thought. In other words, Kubo purposefully had the hollow bite Masaki for the sole purpose (or at this point, it seems to be the only purpose on the author's part) of allowing her to get a clean headshot to finish it off.
My deal is, what basis/justification is there in having a hollow, who's been chopping off people's heads and obliterating them with Cero, suddenly decide to attack a girl using a method that is less likely to kill anyone? And please don't say that it was to induce hollowfication in Masaki's yet-to-be-conceived child.
1) Aizen clearly said that what peaked his interest was that the hollow abandoned a shinigami in favor of a Quincy.
2) Ichigo became hollowfied when Byakuya took away his shinigami powers and he became a pure spirit that was unbound to a living body.
3) the hollow was a product generated from dead shinigami for purposes that have not been confirmed to be meant to produce hollow-ridden children. It is more likely research/study Aizen wanted to conduct to realize his dreams to become a "transcendent being" that is beyond shinigamis and hollows as he mentioned in the past. If this hollow's "instinct" was to give birth to people like fullbringers, why hasn't it attacked other female characters?
And i seriously doubt that she knows Blut Vene, as we never see Ishida using it or mentioning it despite the fact that they were raised in the same family.

Folks, the issue here is that the plan was a desperate plan by a desperate girl shooting arrows at a murder-beast that was coming straight at her. She gambled, coul've lost, won in the end. Got lucky. It's nothing to search plot holes about.
And no, nothing weird in a Hollow biting a human, specially if said human offered her arm.
Maybe that's the hollow's ability or something, to transfer itself into another being, if it suffers a great amount of damage. Kubo didn't exactly reveal to much yet, about this particular hollow and I assume that will be revealed in later chapters.
Quincies are "humans" and based on the beginning of the manga series, humans of any kind are always targeted by Hollows because of their spiritual pressure (reiatsu). The ones that usually stand out, are those hollows who were related to humans by blood or something, or have great amounts of spiritual power or a little. In the case of Masaki, she's human and obviously there's something more attractive to her than the other shinigami that were killed.
Simply because if she died, Ichigo would not have been born.
so how exactly did she die to a scrub hollow while being able to rape this one captain level monster?
So here's how I believe the story goes...
Ichigo is walking along the river bank with his mum, Masaki.
Ichigo sees the Grand Fisher's lure and runs after it.
Masaki panics, running after Ichigo to stop him, but Ichigo is knocked unconscious by Grand Fisher.
Masaki, in a state of stress/despair, loses control and gets taken over by her White infection (she begins to Hollowfy), only this time it's stronger because of Masaki's state of mind!!!
Grand Fisher pretty-much shits himself at the Hollowfied Masaki and escapes!
Masaki manages to resist her Hollowfication long enough for Juhabach to show up, and falls unconscious under the stress.
Juhabach approaches Masaki's unconscious body and sees Ichigo, and prepares to take him back.
Masaki awakens, partially Hollowfied, when Juhabach reaches for Ichigo and lashes out at Juhabach, injuring him.
Juhabach finishes Masaki off, but feels something is off; he's been infected with White.
Juhabach quickly escapes back to the Vandenreich HQ as he begins to Hollowfy.
Ichigo wakes up with his mother's dead body on top of him (as she died her Hollowfication subsided).
The latest chapter pretty much provides the answer and how it benefited the plot. There you have it!
BTW it also makes losing control to the hollow likely to be impossible, since there's an external force to maintain this control
Well, the chapter does address why the hollow did not choose to kill masaki. Its purpose was to pick a shinigami and hollowify him but contrary to its purpose it choose a quincy.
That however does not make masaki's action plan any more insane and stupid than what it was. Granted that the hollow was fulfilling its purpose but masaki did not actually have a clue about the purpose the hollow had. Her plan was still nonsense considering it relied on a bunch of things she had neither knowledge nor control on. A normal hollow not butchering her in a similar scenario was an improbable scenario.... Masaki still had a plan which she had no reason to think would work and the only reason it did work was because of the huge amount of improbable things which led to it.
Masaki pulled off a successful Batman Gambit which only works if the right set of circumstances come about and considering that hollows eat human souls anyway. besides if the white had done what Aizen intended which was hollowify a soul reaper then we'd be asking why didn't it use its swords instead of trying to bite Isshin
Hollow's eat humans. Masaki is a human. Masaki offers her arm as a ruse to draw him nearer. Whitey is a mindless unpredictable beast that is supposed to bite something(whether or not Aizen intended for him to bite someone is irrelevant, because he's a Hollow and Hollow's eat humans, which involves biting). I don't see the problem. If he was going for her head or something, Masaki probably would have dodged....this is Ichigo's mother, people think she's supposed to be a logical strategist like Ishida or something? Really?
Blut is said to be something inherited by Quincies, thus "memories in reiatsu". Masaki had blut, she was sure, that Whitey wouldn't be able to bite off her arm. If he went for the head, she was sure she could dodge. She took him out in one hit. She was already pretty strong, so I can see where that confidence came from.
Just a couple chapters back it's said that she doesn't train much or something in that direction, wouldn't that contradict with her being confident because of her own power? I think she just wanted to do the right thing, and was confident because of her conviction, not quincy powers.
