Anyways, I would start with the original series and the continuation movie End of Evangelion first. But I'm a fanboy.
I'm way too lazy for a whole series. I've been way overboard with new series lately anyway. First Berserk, and then Toriko anime + manga.

I think it's not needed to watch the series and the old movie, that's something he can do if he really enjoys the two movies and wants to have a bigger insight on the whole story. The end of the anime series is hardcore though, the End of Evangelion movie conclusion was better (for me) but quite "special" too.
Mmmmm...it's the non-mecha mecha story. It isn't about mecha...there's a hint of vague mythology to the series, but it's post apocalyptic, tinges of Slice of Life, a lot of angst. It doesn't pull any punches as far as how much of a mindfuck it is, especially the original TV series. I was satisfied with the ending of it, even though I like End of Evangelion A LOT. There was something simple and abstract about it.
The reason I would recommend the original first is because we still don't really know where the last two movies in the Rebuild are going to bring us. The first movie is pretty much the same as the part it covered in the original anime, but the second movie sort of went on it's own path; a much bigger departure than the first one. Still love it, but just saying.
Post apocalyptic? Count me in
