It's more than likely that the Bleach Anime will return at some point of time. But there are some reasons that could have something to do with it's "ending":

-no more fillers ~ they didn't have material and maybe it would have been really bad if they would have made even more filler ~ it would have dragged the story ~ and I don't know if the filler were a good financial thing
-after Aizen the popularity went down ~ maybe you should wait for a better point in the story to resume the anime to really boost the Manga ~ maybe it was a financial problem for the studio ~ I don't know if the anime was a real success at the end... ~
-Tite Kubo makes the Manga know how he wants to ~ he said that the Editorial Department is okay with what he wants to do and he can do it the way he wants ~ what means: more/stronger gore(at least on the human said and not just the hollow), the Bleach anime was kinda directed to kids, too ~ so that wouldn't have been too great ~ and there are some close-ups etc. that could get pretty hard to create in the anime and that wouldn't really be time-filling and entertaining there ~

Based on the juvenile direction the anime is heaeding and the increasing gore in the final arc (as seen for example with Byakuya being on the verge of death) it is possible that Kubo decided to restart the anime towards a more mature audience, perhaps as OVAs. I liked the Bleach anime, but seeing people get cut up and not bleed/cough up water was getting in the way of the intensity of the fights.

He doesn't need to do OVAs, he can still have it come back as an anime. Plenty of animes were/are just as violent if not more violent than Bleach.
