Thank you for taking an interest in my work, and thank you for taking the time to read it and offer advice/corrections, I really appreciate it. I implemented most of what you said (noted below) but I was wondering if you could offer some more detailed explanations about some other ones? I've copy pasted your suggestions below with my comments below. If you have the time, it would be very much appreciated and be a great learning experience.

-->Could explain why you chose 'either way' over what I had? My Jp-Jp dictionary gives me そうであろうと, and alc.co.jp gives me "at any rate // but still // but then // by any measure // even so // switching gear(s)". My understanding here is that it's kind of an ironic statement in that she isn't really enjoying those aspects (which most people would enjoy), but she is, overall, enjoying the weather. I usually think of 'either way' in a situation like the following: "You can go or you can stay here, but either way, you need to make a decision.". Perhaps "Even so, what a nice day"?

-->I'm at a loss on this one. My version doesn't properly account for the "あとは”, but the one you suggested doesn't properly account for the "かしら”. I'm not really sure what to do here as I'm pretty sure the next line is the answer to a question/supposition/hypothetical, especially considering the line that follows it. For now I'm going to change it to "Now, I wonder if we’ll get a look at the new guy’s skills? That's all that's left". Let me know if you can think of anything better.

-->I'm not sure about this one. I think Miki is answering Yuko's "kashira", and looking at the examples on alc: link to alc and this one (which is 間違いない) another link to alc, I thinkwhat I had works. What I thought was that Miki was replying to Yuko's hypothetical about seeing the new guy's skills, and that she meant sort of "of course we will, I mean, chairman mochizuki did select him, after all" (see below). I think if it was "he won't fail" or he won't make a mistake", the line would be closer to "しくじない” or "心配はしないわ” or "間違えない” (from the transitive verb "machigaeru" to make a mistake or to mistake something). Let me know what you think.

The "それにしても", in this case, is Yuko summing up her feelings. It's not something ironic. She was really enjoying the sun and the wind. So, perhaps a better alternative would be something like "Really, what a nice day!"
2) Yuko:あとは新人君のお手並み拝見かしら

-> Now, all we have to do is to get a look at the new guy’s skills.
-->I'm at a loss on this one.
Okay, perhaps if we think a bit more literally, it'll be easier to grasp the meaning: "What is left? To get a look at the new guy's skills, right?"
The "かしら", while being a structure that evokes a question, it's also used in a similar way to a question tag. Therefore, the sentence is an assertion, actually. She has no doubt that she'll get a look at the new guy's skills.
3) Miki:間違いはないわ

Yes, your interpretation is right. But using "undoubtedly" in this context gives an impression that Miki is referring to the possibility of seeing the guy's skills, which is not the case, since Yuko makes an assertion - it's not a possibility, it's a certainty. And Miki is emphasizing that certainty.
So, her "間違いはないわ" could be understood as something like "there was no mistake (in sending him to do this work)".
