Text: Nyonya? TN: The word is supposed to be pronounced like nyo'nya.
Mukai: It's not Chinese?
Makito: Nyonya is what you call straight-born Chinese...
A Malaysian word for Chinese women who were born around the peninsula!
Makito: Places like Malacca, Penang and Singapore in the Malay Peninsula...
Makito: Used to be British colonies in the past. You know that right?

Makito: When those areas were made into trading ports, many Chinese people moved there from the mainland.

Sambal Ikan (Serving for 4)
Mackerel, 4
Onion, 2 mid-sized ones
Garlic, 4 slices
Dried chili pepper, 5
Raw chili pepper, 4
Shrimp paste *1, 1/2 tsp
Sugar, 1tbsp
Tamarind paste *2, 1 tbsp
Lemongrass *3, 1
Salad oil, 1 cup
Salt, variable amount
(a)
Coriander powder, 1 tbsp
Cumin powder, 1 tbsp
Turmeric powder, 1 tbsp
Chili pepper powder, 1 tbsp

Cooking oil

(1)Take out the internal organs, make some cuts on the sides, and rub (a) all over the fish.
(2)Soak the dried chili peppers inside hot water for 15 minutes, and blend it in a mixer along with the raw chili peppers, smaller pieces of garlic and onion, until they become paste.
(3)Pour cooking oil into a pot, and fry the fish from (1) until they become light brown in color.
(4)Heat up salad oil in another pot, stir-fry (2), cut lemongrass and shrimp paste until the smell comes out.
(5)Dissolve turmeric powder in 1 cup of hot water, and add it to (4), along with sugar and salt.
(6)When it boils, add the fish from (3), and simmer on medium heat until the broth becomes thick. Serve.
*1. Fermented small shrimps are the best. Can be found in Chinese grocery stores.
*2. I used for the sour taste. Can be replaced with one dried plum.
*3. Not necessary.
