How should I translate this into English?

I don't understand why the author uses 応対 instead of 反応. I'm just a perfectionist I suppose.

It is properly written as メーラード反応, and the translation is Maillard Reaction. Essentially, it's the reaction of sugars with amino acids (very simple proteins) at very high temperatures to change food into its lovely brown colour and give it a 'cooked' flavour. Whenever you cook food that is derived from animals and plants, the proteins break down into amino acids, which then react with sugar to caramelize* the food, or so I've gathered from the article and my knowledge. It seems like it is indeed a mis-spelling from what a quick google search has brought up for me.
Now, the difference between 応対 and 反応 seems to be the connotation. With 応対, you are responding to customers. With 反応, however, it is defined as 刺激に対する (to respond to stimuli), and appears to be the japanese term for a (chemical) reaction*. 応対 seems to be used mostly in terms of responding to needs of customers.
Anyways, there is the essence of all the information I've gathered, and I hope I cleared it up for you.
*Maillard reactions are not the same as caramelization.
*chemical reaction = 化学（の）反応

^_^; That thought crossed my mind while google searching, since there weren't very many results, but I figured that I was just drawing parallels. There were a few times I felt like I was doing some citogenesis, especially because I was quoting wikipedia >.<
