I swear there were some dead hard bosses in Devil May Cry 3.
This is difficult, One boss never stands out for me its usually One Game and Those Several Bosses
usually RPG's come to mind when i think of hard bosses and particularity Final Fantasy ...
Oh yeah i just played Dragon Age,
That Dragon The High Dragon =_= but pretty any boss can be delt with
easily with right set up and all

ninja gaiden jesus on ninja master ugh that insane
best ever for fun is omega weapon ff8 (which is the best FF) it a hidden boss before end fight started with lvl5 death which was funny first time as i was lvl100s
Ninja Gaiden, to be even more precise, Ninja Gaiden 2 is ridiculous and I haven't even attempt to play it on Master Ninja. Why? Because Mentor beyond stupid. Fun, challenging, but stupid at the same time. (It's an entirely different beast compared to playing on warrior and acolyte) Anyway, this is about bosses so.
Chapter 3 Boss. I'm hearing it's name is Gigadeath. The flying fish/worm with the giant face. Actually, this boss is more like a peeve now considering I just hate fighting this thing.
Ratsetsu. He's been doping or something. In the first 2 chapters, what made him hard is the fact that he has company, and it's a lot of them. Them cheap IS ninja's.
Unfortunately that's all for Ninja Gaiden. I only made it to chapter 11 on mentor, but I'm pretty sure I would've had a hard time trying to fight the main boss.

Lapis in Legend of Legaia. I still have not yet defeated him till now. LOL
@Steelwing- It's easy! the encounter starts with an ambush, so you really have no choice but to eat the damage. After which, you heal up everyone to full health, eat more damage (but this time for only one toon), throw three point cards at him, heal, spirit, heal, miracle arts/ point card. It's a boss you can easily defeat once you have access to at least one miracle art, tons of point card pts, and tons of health pots. I normally keep Noa on healing and point card duties since she's the fastest of the three, vahn and gala can do whatever...
Hm I'm trying to remember but... I just don't remember any. I do know that I faced some though. It's long ago though...
It seems that games got easier and easier lately.
Thus my answer must be: Bishu in Starcraft 2 (a swedish semi pro gamer I met in battle.net some times)
World of Warcraft has great bosses actually. But I didn't face a single one which I'ld describe as "hard" for a single player. The problem is the organisation and the noob quota amongst the raid, as it takes 10-25 players. I didn't really have problems with any of them as my guild was mediocre at best
It's understood that you let one of them die. It's easy to just use Spoon each turn, and don't be stingy with the point card. I only ever used my point card on two bosses: Lapis and Xain.
If I am not mistaken, its impossible to use Serus against Lapis because he reduces everyone's MP to 0/0. xD
You can just recover your mana. if not, you can always rely on healing items.
Final boss of Metroid Prime for the game cube. Never finish the dame game...

Most bosses in DMC3, DMC4 bosses are very easy in comparison.

There are a couple more but I'm having some trouble recollecting right now...I usually have trouble with overall difficulty as oppose just bosses like GOW 2 Titan mode, DMC 3 Dante Must Die, Ninja Gaiden Master Ninja etc
