Well don't forget that there's also the close and long range issue. Your defence can be very good in a close range but it could be awful in a long range battle. Take the Tommyrod and Toriko fight in account. Toriko will be offensively and defensively stronger in a close range than Tommyrod imo.
Whereas I think that Sani and Coco aren't as strong as Toriko in a close range.

I would dare to say that it was practically stated that Tommyrod was toying with Toriko and if he wanted to take Toriko down in a close range fight he would have done so. When he got serious he actually trashed Toriko and the only reason he lost a hand was because of surprise. Even Toriko didn't expect this to happen. He used it on the spot, on instinct, thus he managed to take one of Tommy's hands, but if in such case Toriko would have been long dead without Teppei's help.
About Sani's defence... now I would say that there is no difference for him between long, middle or close range, because his hair are on totally different level of mastery than before, but for Coco I agree with you, but still even if you managed to pass through his defence it will still affect you, because it is poison and I do believe that depending on the enemy Coco can change poison to more serious and stronger versions, thus create more problems.
About close range fighting... of course Toriko should be stronger in pure close range fighting, because it is a basis of his fighting style. I would say if we are talking about mastery of close range, he should be the best, but with Zebra's raw power he should be stronger in this department than Toriko and also Zebra will add his sound attacks to it.
BUT on the other hand - in the anime - Toriko was always looking for an opportunity to get Tommyrod in his close range. Toriko was enveloped by Tommy's bugs and it is on this moment that Tommyrod made the mistake by standing face to face with Toriko. At that moment, Toriko could grab that hand and arm, at that moment, Toriko was able to do a very painful close range attack

It's logical that Tommyrod first wanted to understand how strong Toriko is in close combat, thus he tried to stab him, but then he understood that he isn't fodder to be one-shotted, but still he didn't want to get serious, thus he used bugs. Even when Toriko got the oportunity to land several consecutive series of Kugi Punchs on Tommy Tommy wasn't injured, he was just pissed, because he didn't feel pain for a long while, that's why he got serious.
And of course Toriko looked for the oportunity to get Tommy into the close combat, because he is good at it. It's the only option for him to take down Tommy. But still Tommy was way stronger in that department during that ecounter. Now it might be different after all Toriko's powerups, but we should wait and see, because Tommy was also refered to have gotten stronger.
