Death Note had a Center Colour on its second last chapter and I know for sure that another series or two did as well.
Soma got it's 4th 23 page chapter so far huh... Can't wait for this week's one with that spoiler
Also, random fact, it's the second time Saeki Shun mentions Koisome Momiji's pair in his chapter comments, first time it was about eating together, now he's promoting vol 4 of Koisome...
Edit: He even calls Miura Tadahiro, Miura-shishou...I guess learning from someone who draws girls that well wouldn't hurt...
As for series with color, I think what Pirulito said is quite right, you can't really expect cancelled series to end with color...

Shaman King did too and that was cancelled, pretty much if they were kinda popular or around 20 or so volumes they might end with CP. Prince of tennis too, Jaguar while I havent seen it ended with all bichrome pages and IIRC didn't the whole ending of Nurarihyon was in color?
Though other popular titles didnt get one, example Hikaru no Go or Dragon Quest which last Cp was 6 weeks prior to its ending.
Magico ended with a color page too
The Full-colored chapters were only present in Digital versions but, if I understood it correctly, all digital NEXT chapters get such treatment so thats nothing special I think.
I'm fairly sure the rights are actually Dynamic Pro's, but licensed out to Kodansha, aren't they?
First off I dont think they are Kodansha-owned, as Maxy wrote they should be owned by Nagai (Dynamic Pro)
Second there have been cases for example Saint Seiya where even though the newest mangas have all been publishe by Akita Shoten Shueisha still has rereleased the original series a couple of times, IIRC 2012 was the last rerelease.
Third I have some Jump artbooks and they have some of Nagai's works (including Mazinger) these books were published in like 1993 and 1998. Also IIRC Mazinger and Harenchi Gakuen characters appeared in Jump NES game.
Btw I am not completely sure any company owns any manga published.. Examples Shuho Sato (angry with the entire manga industry), Makoto Raiku (Left Shogakukan because they lost some of his art), Kohji Kumeta (left Shogakukan, dunno why but maybe he isnt in so bad terms because IIRC Zetsubo had a one-shot in Sunday), Takehiko Inoue (IT planning holds the international rights to Inoue's mangas), the mangakas of Hokuto no Ken, City Hunter which basically declared the war on Jump making their own magazine. Then there are some cancelled JUMP mangas that continued in other magazine/publishers.
It might happen, though I doubt it -.-
Also the WCF are from Banpresto, subsidiary of Bandai, who do all the Mazinger toys, IIRC. So if anything it's got okay to good odds, although I'm sure it'd be more likely to have a chibi figure collection all its own rather than join in on this.

There will be 2~3 more series (most likely Nisekoi, Assclass, One Piece) that will also have a card drawn by their authors as well for the upcoming comic releases. I couldn't find them, but they should be up in the next few days.

Next week's Sakiyomi Jump Bang will be a special on Shokugeki no Souma.
Btw, this issue celbrates Beelzebub 4th year anniversary. With this half of the magazine is made by series with 200 chapters or more. This is quite a first in the magazine.
Even Beelzebub isn't at 200 chapters, but it's getting close at 194. Same with Medaka Box 10 chapters behind it, but it might not make it to 200 if the story ends soon enough.
