A classic burek. May just be dough and meat but it's very tasty. More tricky to make homemade than you'd expect

The Stock

Roast lamb bones in oven at 220+ deg. C, till just before they start to burn
In a saucepan add onions, carrots, celery - a little olive oil - and fry till veg begins to brown
Add tomato paste to veg
Add bones to pan
Pour boiling water into the pan that you used to cook bones and deglaze - pour liquid into the pan
Simmer for like 1 hour and skim off the scum that rises to the surface
Add herbs as required (parsley/thyme/bay leaves work well), pepper corns - NO SALT (can salt to taste later)
Simmer for like 4 hours, or so
Strain the liquid into bowls to keep (you can reduce further and then freeze in ice cube trays, if want to keep to add to other stuff)

Can do this long before, as it keeps in the fridge/freezer and can be added to lots of other dishes


The Potato Topping

Turn oven on at 180 deg. C

Bake potatoes - in their skins - for like 1 hour
Allow potatoes to cool, then scoop out the insides
Seriously, this might be a lot of work but it makes some of the creamiest mashed potato
Add a little milk and butter to cool potato
Add strong cheddar cheese
Mash mix together till no hard lumps


The sauce

reduce red wine down to a syrupy consistency
add lamb stock and a few mint leaves
Simmer for like 15 mins, taste, and add salt if required


The filling

Fry diced lamb meat in a pan till browned
Add chopped onions, carrots, celery and garlic and fry for a bit
Add peas and stock
Add a splash of Worcestershire sauce
Simmer for like 20 mins or so


The baking

Pour into casserole dish
Cover with cheesy mashed potato topping
Put extra cheese and a few knobs of butter on top
Bake at 180 deg. C for like 25 - 30 mins (I dunno, just do till top is golden brown and sauce begins to escape the potato cover)

I was gonna choose a different kind of dish - such as a traditional meat pie - but 2 of you fine folk expressly mentioned this honourable dish, so I felt obliged to use it as the example

It's ranked 7th out of my top 10 favourite countries for food

The UK has some of the best cheese, the best sausages, the best pies, some of the best roast meats (and roast food, full stop - the lack of an oven physically hurt me, when I was living in Japan), awesome cakes, jams, chutneys etc. some of the best alcohol (the beer, whisky, and mead [3 of my favourite drinks] are far superior to what most countries have to offer)...

The UK has some of the best Indian food, outside of India (due to all the Indians who moved there and set up shop)
There are curries, sold outside of the UK, that were invented in the UK and that people think are from India

I don't need to try hard to make food from the UK look good



Also, I am actually somewhat upset by how few countries have lamb as a mainish meat... it's fudging amazing

Actually, funnily enough I do have a self made photo to represent Vietnam. So I might as well add a little description to it: I remember that a Vietnamese friend of mine brought me to his parents Vietnamese restaurant. Oh boy, that was some good stuff!

The picture above, is the dish Phở . Phở is an absolute traditional Vietnamese soup. It consists of meat, herbs, rice noodles, and chicken, of course some spicery can be added as well or limon. Also, there are Gỏi cuốn represented in this photo as well. Gỏi cuốn are Vietnamese spring rolls, and I just like these a lot.
