Kaido - Massive battle royal featuring Luffy, the other Supernovae, Marco and Sulong Inu and Neko. They actually might fail to defeat him here, since there is Caribou that is supposed to lead Kaido to Shirahoshi. Final fight versus Kaido might be at Fishman Island and the Sea Kings might play a role in it.
Big Mom - Someone else (Blackbeard?) takes her out before she can arrive in Wano. Meanwhile Laffitte steals the poneglyphs in WCI.
Blackbeard - 1v1 versus Luffy on Raftel.
Shanks - Blackbeard defeats and kills him.
Akainu - 1v1 with Luffy amidst the final war.

One thing that I think is very important for the flow of the story is that Luffy shouldn't be the only one to defeat the Big shots, his rivals have to do so as well.

I doubt it. Everyone dreams are to be better than those of previous title. I doubt Sanji will lose his legs as he will be someone to surpassed Zeff by far in fighting.
