Thia is true if you're talking about the real world. Remember the mohs scale, you just can cutt a material if you have a more hard material, blunt damage is a different thing.Where did you get that Daz is weak to blunt attacks? How can he be weak to blunt attacks but not swords? And given he can turn any part of his body to sword, how would Luffy and Sanji stand a chance without swords?
Sanji could beat Kaku without his swords and could find a way to beat Ryuuma, but I"m not sure how as Ryuuma is a swordsman and doesn't transform.
Luffy uses the strongest attacks he can to win against hated opponents, while Sanji's fights aren't that kind of urgent. He and Bon were friends, against Jabra he needed to get the key, and Absalom had an animal body that was extremely tough, but Sanji was still able to deal enough damage that Nami could finish him off.
Sanji could kick a submarine and a whale in each free-kick with his feet, no steel plate in the world could stand a blow from him, but anyway, One Piece have their own logic.
