Viz isn't really catering to people like us that follow Japanese news and stuff but the more mainstream audience that may pick up a series that looks fun because they saw it on the bookshelf. Using English names helps a lot there. We do have stuff with their Japanese names though. Jujutsu Kaisen was left as is, Demon Slayer: Kimetsu no Yaiba is the full title, Viz kept "Kaiju No. 8" while Manga+ changed it to "Monster No. 8", etc.
This. I think it has to do with how catchy a name sounds, or how easily it roles of the tongue.
They want names that flow together well, and are easy to remember for a casual western audience.
Jujutsu Kaisen, and Yu Yu Hakusho are easy to remember, and said out loud have a nice flow.
Where as something like Shingeki No Kyojin, or Shokugeki No Soma isn’t gonna be something your casual anime watcher is going to remember, and will probably prefer a translation.
On top of that, sometimes it’s better for an eye grabbing title. Demon Slayer immediately tells the dude in Barnes & Noble what the series is about. But that same dude probably has no idea what Kimetsu No Yaiba means, and may pay it no mind
