I figured if Eren is sending memories to the past which doesn't affect his timeline, then what is he affecting? Sorta think that, that timeline would become one exactly the same as Eren's but it isn't a paradox because the information came from a parallel timeline that already existed.

Well, Kruger's words are from Eren's memories which in turn came from what Grisha said to Eren which in turn would lead back to what Kruger said if Grisha deliberately reiterated Kruger's words. Hence the paradox.
