I think Luffy has been given to many oppurtunities to learn about haki to not learn now... I could picture him asking Jimbei how is he supposed to fight someone like Akainu, and Jimbei saying you're in the perfect place to learn. Also with the fact that Luffys bounty obviously has to rise...
