Toriko could go in a million directions.
I highly doubt it's gonna end in anything less than 30 chapters even if Shimabukuro goes at breakneck speed. Probably more, really.
They've still got 4 teams set out to collect the Full Course ingredients, including Toriko who still has to get God which has been the big goal for the whole manga. There's an open plot line about Ichiryuu and Don Slime. There's a mystery about Frohze and Joa and their backstory and motives. There's Toriko's 3 demons inside his cells and what's goin' on with them. There's Komatsu's demon which looks like Joa's demon that hasn't been explained. There are 3 fights going on right now that don't have conclusions, Jirou VS the Blue Nitro, Midora VS Joa, and Don Slime VS Neo. Teppei's off doing a thing. The Neo creature, which seems to be the ultimate threat, has to be resolved (Right now it can't reach it's final form before it eats God, so you know it's probably gonna do that). After that there's also the "Farthest Land" which is supposed to have to do with the final area you can only get to AFTER you collect the whole Full Course, which is something even Acacia couldn't do.
And at some point Toriko has to collect the remaining few items on his Full Course. Since that's like the "get the One Piece" thing of Toriko. The thing that marks when the series will end is when Toriko has his Full Course because that was the very first big goal established in the series (They also mentioned at the end of the Human World arc that it was a majorly important thing).
All that stuff's gotta be resolved. It's kind of a lot. Toriko's not the sort of series that takes a LONG TIME to finish plots like that (Sometimes a bunch of shit gets settled in one chapter, and sometimes it takes a year) but it's not about to end or anything.
Gintama on the other hand, has to finish out the arc it's on, then after that will probably be the last one where they need to beat Utsuro. They announced at Jump Festa that there'll be an OVA of one of the arcs they didn't animate on the TV show in volumes 65 and 66. This last chapter was the last chapter of V63. So that means the series has at least 3 volumes left, which is a long time for Gintama standards. Arcs are usually really short. So that may be where it ends, or it might go a little longer.
