Yeah but... the context so far is that it can resist anything regardless of how powerful. There isn't a benefit to using a spell that presumably would increase endurance or something that is already unbreakable.Maybe but it buffs powers. So it should make it even more powerful than it is already.

Gowther didn't really take a significant hit to beat Dreyfus and it was not even needed for him to use NT, his chest got pierced but these kind of things are nothing to him because of his body. Against Hendrickson, he could have been more useful, with all their feats I am certain Ban could have beaten Hendrickson by himself back then and it's the same for most Sins. He was not allowed to do much, IIRC, he attacked only once and his attack is the only one Hendrickson avoided. Invasion can be resisted of course, but a lot of times NT fails for plot reasons. As you said he could have just beaten Escanor without it, but he did use it because he "respected" him. Dreyfus returning via Fraudrin is another reason it didn't work perfectly. Invasion can be resisted of course, but it is still very powerful and there are possible aftereffects. Having a high Spirit stat seems to be the best way to resist it but there are different kinds of attacks possible and it worked on opponents with a much higher PL even when he was in the 3K. Escanor transformed thanks to it, but he still got affected by his Blackout Arrow after his transformation.I was thinking about what nerobasta said when she said that. Still, in context it makes sense given melascula's skillset. Even her spells are not particularly destructive in general.
Just look at gowther's track record with his magic so far. He bested dreyfus but he did have to take a significant hit for it. It's not like he had much of an option of using his magic without being impaled. Granted he did win that one. Against hendricksen gowther was essentially useless other than to transmit the plan to everyone. He didn't even attack hendricksen IIRC. Then against diane he had more than a fair bit of trouble considering diane was at half her size and at the time gowther performed much better than diane without a sacred treasure. Against escanor his magic backfired completely, he would have been better off just bitch slapping him. He tried using his powers to save diane but in that case the evil grudge spirits were able to resist it. I would argue we have reached a point where his powers will be far less useful than what we had seen before. His strongest technique so far, nightmare teller, works basically by targeting a person's regrets and remorse. There are some people against whom this would not be too effective, the technique can be resisted. In particular demons who effectively work as remorseless killers who seem to genuinely grow stronger on darkness. Invasion is insanely powerful but it also carries a huge risk for gowther as it is entirely possible for enemies to resist it (at least based on the evil grudge or escanor). Not to mention that gowther does have to catch his enemies of guard for this to work to begin with.

Usually in similar series and games etc magic users have to keep using mana to keep spells up or use things like Merlin's ice spell for more than a second. She just casts them, makes use of infinity and bamm, she can stop using up her reserves.Infinity is a fine magic, yet we haven't seen any useful applications aside from Merlin freezing her personal time.

The ability's utility lies in both keeping spells running until Merlin doesn't need them anymore and allowing her to punch way above her own weight because she doesn't need the same kind of sheer magic power as someone like Monspiet who uses up a big chunk of his power to cast a single spell because he has to sustain it until it hits.
