Reading cooking magazines I knew that croquettes are actually a very difficult dish to make "spot on". When I make them myself I always make a different mistake: they are too soft, bechamel is not consistent enough, the oil wasn't on its ideal tempreature... but mothers somehow control it nearing perfection. :lambirb
