Is only the last 5/6 chapters after the tournament that was skipped but is a whole adaptation of the series (and better than the manga in my opinion...)
Also there was Hoshin Engi, it was a full adaptation right? i know that was criticized, that was rushed AF and etc but still a full adaptation. To Love-ru anime is also a complete adaptation of the manga (of course skipping some chapters)
About Hoshin Engi.. No, it's a very weird adaptation, the first episode covers stuff from the entire first volume. Then from episodes like 2-12 they cover volumes 2-11ish (basically where the first anime finished, though the first anime had an original ending and only covered volumes 1-8).
Then they skip like one or two volumes worth of content and arrive to one of the most beloved arcs in the story (basically their plan was to get here fast) episodes 12-24 iirc were good paced, they covered volumes 13-16 or something like that.
But the manga is 23 volumes long and they only covered up to volume 16ish. it's weird because they showed us some of the stuff from the later volumes (when an episode started they you scenes from future chapters, and when I say future chapters I mean future chapters, like no kidding the first episode's first scene is the final battle the anime covers! And then it cuts to the actual first chapter...)
And they did for every episode, I guess they just wanted to show fan favorite scenes that wouldn't get animated (a lot of the scenes they showed in the first couple of seconds of the episodes were scenes of chapters so far ahead that they didn't even get to that part of the story in the anime).
The animation quality was actually quite nice, but the damage had already been done... Imo they should have just started from where the original anime had finished if they were going to do this weird stuff. As one of my favorite manga it hurts.

Saint Seiya's anime was cancelled and then, a decade later finished animating its WSJ run via OVAs.
Sexy commando and
Ninku should have been completely animated, no? Both were pretty short and had animes.
Shaman king and
Dragon Quest Dai no Daiboken (and
BLEACH) should be fully adapted now (if not.. what was the point lol)
Captain tsubasa's original wsj run was adapted (it's pretty much the thing hat has been remade to death... 3 times of remaking the same content now instead of actually animating new arcs..)
Hokuto no Ken? Idk? Sounds like something that should have been fully adapted..
Death Note and
Bakuman (though iirc they skipped an arc or two... nothing major)
Yu-Gi-Oh! was completed, too.
Prince of Tennis I would actually consider it a complete adaptation too, though it was kind of weird. Some of the matches in the later part of the story were different from the ones in the manga, this was due to the anime catching up to the manga. There was one match in the manga that was
not shown, like the team wasn't even shown. I'm pretty sure this was at the request of the anime studio because there was a filler match in the anime for that team (This match doesn't happen at all in the manga).
Then iirc some of the later matches were completely changed because they could not wait for the manga, they even continued the anime for a long time, the merchandise must have been selling great I guess.
Then years later they started adaptating the last parts of the WSJ run in OVAs (IIRC there were like 30), actually Prince of Tennis is probably one of the franchises that has the most OVAs ever, it probably has like 50 by now.
