Guy had a plan that required using the Strawhats, used the Strawhats, everything miraculously worked out after the Raid and he merrily went back to his ship and crew who were then briefly turned into women as another Yonko ambushed them in the middle of the ocean.

Some people overestimate their relationships with others. Like a lawyer, or something, who works for a cartel and has a body guard expecting all the personal time they've had with the body guard to realign their loyalties, but it never actually happens. I honestly didn't see many (or any) others calling it that Sentoumaru would flip the table a bit. Too much focus on Lucci. FWIW I haven't been super active on these forums lately either, though.
Don't they lose their personality when they awaken? I thought it was mentioned that Zoans are actually among the abilities you may not actually want to awaken, because they have a mind of their own, and that was why the ID Jailers were kinda dull, personality-wise.
This is only a common assumption on the fandom, but there is absolutely no ability you do not want to awaken.
We saw those jailers as dumb beasts and they were mentioned to be awakened, but we were never told they were dumb just because they were awakened zoan users. For all we know they were just groomed that way by the WG to become strong arms for the jailers. Luffy is awakened and he was still Luffy all the way.
Zoan fruits do have some will (Lucci himself did mention that first when talking about carnivore zoan users being more aggressive or something of the sort) but to go from there to "the fruit overwrites the users personality entirely when awakened" is a jump.
The only thing we know pretty much for sure, by Kaido's words, is that zoan awakening = new transformation.

Zoro is almost definitely more than a hair under mihawk. Zoro just barely got to being capable of using conqueror haki cladding and his capacity to fight at the yonko tier is presumably limited by the amount of haki he has. Against king he managed the raw power output of a yonko but he made the point he can't last like that. Meanwhile actual yonko don't need to go through extraordinary effort to fight like that. It's a pretty safe bet that for mihawk this would be just casual combat and he is pretty likely a cladding user, unless oda is aiming for a lackluster low stake battle between zoro and mihawk.
As for the spoilers... weird? I suppose it makes sense sentoumaru would target the strawhats. With multiple seraphines and CP0 this is definitely an interesting fight. The seraphines did seem to give even BB some measure of trouble so odds are even luffy can't deal with them quickly. more than their physical combat capabilities, I think the prime issue the strawhats will face is seraphine abilities. So far the confirmed abilities are:
S-kuma: Paw paw fruit
S-Shark: Swim swim fruit
S-snake: unknown
S-hawk: Unknown
While it's pretty unlikely the kuma seraphine can win against luffy, zoro, sanji or jinbe... The paw paw fruit is just some bullshit. The air explosions will likely give even luffy some pain but the main issue is kuma's ability to split the crew. I think at least luffy, zoro and sanji should be relatively safe from this. Luffy an zoro over their sheer strength and maybe haki and sanji over his seemingly insane speed. Jinbe seems less mobile. I think it's not too insane to think a strawhat could end up teleported somewhere.
I think the jinbe seraphine is probably more dangerous than evidenced before. His speed on land should match that of a fishman in the ocean... This should be absurd.
I would also guess the hancock seraphine won't have the love love fruit. Since it's simply too broken. Alternatively perhaps it will be held back by the fact that the seraphine is not the actual hancock and thus does not generate the same response from others. I think the more interesting bit of speculation here would be what fruit they would give the non fruit user shichibukai copies. evidenced by S-shark they can give them abilities the real deal does not have. The question is the criteria under which vegapunk could have obtained abilities. Evidenced by the real kuma it's not an issue if the original holder of an ability is alive. I suppose the main issue here will be whether vegapunk had access to the lineage factor of a specific fruit or person... But then, that means they have access to every fruit in the marines and impel down at least. In that sense it's kinda weird that they wouldn't make every pacifista into a light logia user. I suppose the aim would be to maximize their effectiveness. So... what abilities would they choose for mihawk and maybe hancock seraphines?
For mihawk... the obvious choice would IMO be a zoan fruit. As a swordsman it's the more obvious boost. I suppose a hawk model fruit? Which would make it into also a flying swordsman. Though maybe since they have wings this isn't something that adds THAT much. The other ability which seems relevant is daz bone's. It'd turn the seraphine into a living sword. The bara bara fruit would perhaps be too OP here. A swordsman immune to swords... Baby 5's fruit would be quite good as well. Maybe a mantis type devilf fruit for mihawk? Perhaps the appearance of that wouldn't do him justice though. Logia wise... I think everything is the same to mihawk.
That also leaves the issue of the missing seraphines... crocodile, doflamingo and gecko moria. Crocodile and gecko moria were rather lackluster shichibukai but their abilities are incredibly powerful. Maybe we get to see a glimpse of gecko moria before his fall from grace? At a glance it doesn't sound like the WG could abuse the shadow fruit as much as moria because while they are villains they aren't saturday morning cartoon villains. But thinking about it there is an obvious solution and source of strong shadows: Impel down. From ID they could collect hundreds if not thousands of powerful shadows the inmates weren't already using anyways. So you'd have a gecko moria clone enhanced by at least lunarian physiology... And in its physical prime. Who knows how many shadows a pacifista could hold. Or worst, perhaps it'd be interesting to see it rampage. Doflamingo has been captured by the world government so his lineage factor should be fairly accessible. Crocodile was a prisoner for years so it's not a stretch that they could have it.

The 'entirely' part is the questionable part. When you see Chopper's sort of awakening, you can see that his personality was entirely re-written. The Impel Down guards also show this questionable trait, but they still do their jobs.
Given the comments, what we have now seems to indicate the personality of the fruit could jumble someone up if they're not careful. We also have Chopper who has shown that he can handle his version. And we know a person's apptitude makes a difference, as seen when Franky was in Chopper's body.
Anyway, that's the context you need to know which explains that not everything is the product of fandom assumption
