A lot of the characters from the Claymore world's rankings given by the Organization were not revealed in the Databooks.
We, however, got some rankings from the databooks regarding Claymores and ABs.
Claymore Rankings are based on:
Yoki
Speed
Strength
Mentality
Perception
Leadership
What do we know about these rankings?
They can be E, D, C, B, A, or S.
E-A will have +'s for in between.
S is used as a special level of ranking if the Claymore possesses a special skill that already goes on top of their extreme ability in that aspect.
Thus, without a special ability, the highest ranking for each aspect would be A+.
We also learn that the Organization is quite stingy with the rankings.
Claymores with ranking status under a single digit rarely have any ranking above B/B+.
Claymores in single ranking status at 6 and below normally only have one good ranking stat that puts them as a single digit, and then some average stats. Even then, only few have a stat above B+.
Claymores in the 1-5 ranking status normally have at least one specific stat that is A or higher, or have multiple.
From rankings 6 and up, there is an exponentially increasing gap in power between each ranking.
A number 2 Claymore might have some B's and A's and even a C or so, but rank one Claymores almost always have A range rankings, with a few B+s.
There is the sole exception of leadership, which almost every Claymore who does not lead a party loses out on.
The highest case of leadership was obtained by Miria, A+.
Number ones tend to not do so well in the leadership category, rarely getting anywhere near an A, possibly due to their rank or past experience and isolation that hinders their capability to lead/communicate effectively.
As stated above, once you get near the top five Claymores, the power gap gets increasingly large in between, especially between the number one and the number two.
In many cases, number ones are able to defeat all five top tier Claymores under them with ease. That is the potential of a number one Claymore.
One important note is that unlike AB, Claymores have the potential to change their rankings, either by improving or...deproving (lol).
A last note is that the Organization sometimes gets the ranking of a Claymore inaccurately, since they are not able to precisely determine it all the time.
A possible and likely example would be Teresa, who they greatly underestimated.
Despite her already superior rankings, it is hinted that her Yoki stat and other rankings could be much, much higher.
Finally, it is noted that Claymore rankings are not updated frequently.

Onto Awakened Beings.
Number ones that become awakened beings are denoted as Abyssal Ones as the standard protocol.
The stats for AB are simply an extension of the Claymore ranking system, to greater powers.
E-A (under-AB rankings)
For some especially weak AB, they may even have horrible rankings that go under the standard of ABs.
S-EX (AB rankings)
EX is apparently the equivalent of a S/S+ on the Claymore scale.
The only stat recorded for EX by the Databooks is Priscilla, with an astounding EX stat for her Yoki.
EX is essentially the pinnacle of stat rankings.
However, EX seems to be as common as the S ranking for Claymores.
That is, it is commonly given to AOs similarly as to how S is given to Number 1s.
Why? Priscilla, with an EX ranking, is beyond an AO.
Yet Dauf was a number 3 Claymore and he has a SSS+ ranking for Yoki.
Despite being known as having insanely high Yoki, Galatea stated that his companion (Riful) had much more Yoki.
This meant that AOs usually have around EX for their Yoki.
But then that means Priscilla should actually have, in truth, an EX+ ranking/EXX.
And there we have another inaccuracy.

Note: Awakened Beings are much, much harder to categorize and rank for the Organization than Claymores. Thus, the ranking of each AB is more based on an improvement from their Claymore rankings before they awakened. As a result of inaccuracy, some ABs like Ophelia have rankings lower than their true ability; she killed a female AB with similar ranking as her own AB form before she herself awakened.

(See how Katea has under-AB ranking? This is what happens to most Claymores who awaken in the lower 30 rankings. They're just too weak. One exception is Dauf. He's literally a SSS+/SSS Claymore, but... his Speed is crappy because of his size and his Intelligence is just terrible. It doesn't really matter, since he was stupid in the first place.
A noted trait about ABs is that they cannot have the potential to change their rankings at all.
Except maybe the Intelligence ranking; Priscilla actually became more intelligent after regaining her memories. Much more intelligent.
