Serious question, I feel like most of us just accepted the story but how did Oishi beat the Mutsu twins?

MS stats were lower than twins.
Even if Niou knew every single move the Mutsu planned, can Oishi really beat them both? The twins knew everything Niou was planning and there stats were still higher, plus the Mutsu Oishi pair must have been a weak combo with loss of synchro.
If Mutsu turn off synchro, Niou is stuck in a useless form. And they lose by base stats. If he switches copies, then Mutsu just synchro again.

Yes. Oishi Territory and Moon Volley actually still worked at that stage as we saw, so as long as Oishi's partner is capable of keeping the ball in play, Oishi will eventually score that way. Niou's stats are a bit lower than the twins', but considering he only focused on receiving, knew where they were going to hit and the fact that the Mutsus have no techniques outside of Synchro makes Niou pulling this off plausible.

As for turning Synchro off - they can't. Because they're twins they have an innate Synchro of sorts (note the bottom left bubble, because they're twins) and Synchro as technique presumably just amplifies that further or something.

They clearly turned it on I thought, so it makes sense that they can turn it off at least a little. Even if Inui can predict a play 100% he would still lose to a better character, so Oishi must be pretty strong then.

When he's not completely outclassed by specific shots like in the current match, Oishi is a really good doubles player. And to be frank, Oishi Territory is kind of a broken move. That said, I think it's a little different because Inui needs to predict and return all shots, Oishi just has to look for an opening and hit the ball once to the right place.
