That doesn't mean he saw it coming before Katakuri actually interfered. Katakuri can predict before it happens, Sanji doesn't seem to be able to do that. He didn't use the ability against Vergo, Doflamingo, or Judge, so therefore it's reasonable to assume he can't use that ability, and that it's exclusive only to Katakuri.
