While I was rereading the series after the end of Part 1, I decided to make a timeline since I’d never seen a comprehensive one anywhere. I think I expected Part 1 to be about a year long before I started, so I was really surprised when I realized that it was significantly longer. By estimating at a few points—mostly the time between arcs—I’m fairly sure that:
  1. Roughly a year passes from the beginning of the series until the start of the Mellow Cola arc
  2. Approximately 8-10 months pass between the Mellow Cola arc and Gourmet Santa chapter (this is 100% certain)
  3. Something like 4-6 months pass between the Gourmet Santa chapter and the Cooking Festival
  4. All told, Part 1 of Toriko is approximately 2-2.5 years long

Which means that there are a few small inconsistencies:
1) There’s no way Toriko and Komatsu were 25 at the beginning of the series, despite their bios.
  • Toriko’s birthday is 5/25 and Komatsu’s is 3/31.
  • In Chapter 176, they both said they were 25. However, by 176 nearly two years have passed since the manga’s start. If Toriko and Komatsu are correct in 176, it means they must have turned 25 around the time they were at Honey Prison the previous year. Also, roughly a year passes between Chapter 1 and Honey Prison, which means they would have been 23 (going on 24) or newly 24 around the start of the series.
  • By the end of Part 1, they should be close to turning 26 if they’re not already.
2) Grinparch saying in Chapter 60 that the Gourmet Eclipse is likely to happen in the next 1 or 2 years? Definitely off, but it was never something set in stone anyway.
As for the estimates I had to make, there are two types: estimates that were possible to make based on context clues, and estimates that were impossible to make due to lack of info. For the first type, I simply wrote “Est.” before the arc’s duration, to indicate that the value is somewhat accurate but perhaps not exact. For the second type, I wrote “X” and chose a value I thought was reasonable (1 week). All told, there are actually very few points I had to use “X”—mostly during the time Toriko and Komatsu were building the Ehou Maki—so I don’t think it compromises the timeline too much.

Anyway, it's hard to summarize the timeline in words, so I made a "table" to make things clearer:
Code:
                    Arc Duration Total Duration
——————————————————————————————————————————————————————————————————————————————————————
Galala Gator 3 days 3 days
                    A few days 1 week
Rainbow Fruit Est. 1.5 weeks 2.5 weeks
                    Est. a week 3.5 weeks
Puffer Whale 1 day
                    A few days 4.5 weeks
Regal Mammoth 2 days 1 month, 1 week
                    3 months 4 months, 1 week
BB Corn Est. 2 weeks 4 months, 3 weeks
                    Est. 1 day
Century Soup Est. 6.5 months 11 months, 1 week
                    X (Est. 1 week) 11 months, 2 weeks
Ozone Herb Est. 2 weeks 12 months
                    X (Est. 1 week) 12 months, 1 week
Melk Stardust Est. 2 weeks 12 months, 3 weeks
                    Est. a week 13 months

MARCH, APRIL OR MAY: Honey Prison

Mellow Cola Est. 2 months, 1 week 15 months, 1 week
Surprise Apple 1 day
Chiger Egg 1 day
Shining Gourami 1 day
Meteor Garlic 1 day

DECEMBER 24: Gourmet Santa 21-23 months

                    X (Est. 1 week) 21-23 months, 1 week
Madam Fish Est. 2 days 21-23 months, 1.5 weeks
                    X (Est. 1 week) 21-23 months, 2.5 weeks
King Vinegar Approx. 10 days 22-24 months
                    X (Est. 1 week) 22-24 months, 1 week
Dodurian Bomb Approx. 1 month 23-25 months, 1 week
                    X (Est. 1 week) 23-25 months, 2 weeks
Eco Nori 5 days 23-25 months, 2.5 weeks
                    X (Est. 1 week) 23-25 months, 3.5 weeks
Bubble Fruit Est. 3 weeks 24-26 months, 2.5 weeks
                    1 week 24-26 months, 3.5 weeks
Four Beast 1 day
                    Approx. 3 weeks 25-27 months, 2.5 weeks
Cooking Festival Est. 1 month Approx. 26.5-28.5 months
Therefore, with a final total of 26.5-28.5 months, 2-2.5 years is my best estimate for Part 1. Approximately 2 years is the minimum amount of time that could have passed if all variable times (X) were lowered close to zero.

If you’re interested in how I came up with all the numbers, you can read all of my notes below:

Galala Gator - Melk Stardust
Galala Gator (Menu 1): 3 days

Day 1: Toriko and Komatsu meet. Komatsu goes back to the city to talk to Uumen Umeda.
Day 2: Toriko and Komatsu leave on Tomu’s ship and arrive at the Baron Marsh. At night, Toriko captures the Galala Gator; he and Komatsu eat it through the night [C1, P42].
Day 3: Komatsu yells at Toriko for eating everything [C2, P34].

A few days pass (Komatsu says “先日はどーも!”—“Thank you for the other day!”—to Tomu in C3, P13).

Rainbow Fruit (Menu 2): Est. 1.5 weeks

Day 1: Toriko meets Komatsu and Johannes at the World Kitchen.
Sometime later: Toriko and Komatsu arrive at the 8th Biotope and obtain the Rainbow Fruit.
Note: This is probably the same day since they’re wearing the same clothes, but maybe they had to travel in them?
Someday later: In the evening, Toriko eats the Rainbow Fruit at Hotel Gourmet and adds it to his Full Course.
Note: Toriko advised Komatsu to take a week off of work to heal his sore muscles [C6, P3] and at Hotel Gourmet, he still isn’t fully recovered [C7, P7], which means that this is probably happening about a week later, give or take a few days.

An unknown amount of time passes (I can only say that probably not a lot of time has passed, since Coco predicts that Toriko will visit him at the end of C7).

Puffer Whale (Menu 3): 1 day

Day 1: Toriko and Komatsu travel to Gourmet Fortune by train, where they meet Coco. The three of them go to the Sandy Beach Cave and capture the Puffer Whale.
Note: This is definitely all the same day, since Coco complains about Toriko going straight to the cave after eating most of the food in his house.

Several days pass [C19, P9].

Regal Mammoth (Menu 4): 2 days

Day 1: Toriko and Komatsu arrive at the 1st Biotope and end up at the Gourmet Colosseum. Toriko fights Bei and the newborn Terry becomes his animal partner. The group feasts on Mansam’s full course though the night.
Day 2: Sunny arrives with the baby Regal Mammoth. After much struggle, the group finally finds the parent Mammoth and obtains the Jewel Meat. At night, they eat the Jewel Meat.
Note: I suppose they could be eating the Jewel Meat the night after the fighting or something, but nonetheless, this arc is three days long or less.

Three months pass [C55, P9].

BB Corn (Menu 5): Est. 2 weeks

Day 1: Toriko goes to the World Kitchen and meets Tom. After dark in a bar, Tom tells him of the BB Corn.
Days 2-4: Three days’ worth of travel to the Northern Wul Continent [C56, P1]
Day 5: Toriko and Terry arrive at the Northern Wul Continent and explore before camping for the night.
Day 6: Toriko and Terry enter the Wul Jungle and eventually find the BB Corn. They cook a kernel throughout the night.
Day 7: Toriko and Terry successfully cook and eat the BB Corn; Toriko adds it to his Full Course. Toriko meets and fights Grinparch.
Someday later: Toriko takes some BB Corn to Hotel Gourmet and invites Komatsu to Gourmet Town.
Note: It would take Toriko at least 3 days to get back home after leaving the Northern Wul Continent, which brings this up to 10 days. I’m going to assume that he went home before going to Hotel Gourmet (seeing that image of Terry eating BB Corn from a dog bowl) and round up to 2 weeks.

A short time passes. (Since Toriko says “これから町へ行く”—”After this, I’m going to the city”—I assume that he’s asking Komatsu to go with him right away. Komatsu also mentions that he has to withdraw money from the bank, so it seems like he’s making his preparations quickly. Let’s make this 1 day of travel.)

Century Soup (Menu 6): Est. 6.5 months

Day 1: Toriko and Komatsu arrive at Gourmet Town and meet Setsuno. After dark, they eat at Setsuno’s restaurant. They then head to Bar Heavy Lodge in search of the Century Soup.
Someday later: Toriko, Komatsu and the rest arrive at Ice Hell. They walk into the wind and eventually set up camp after some time passes.
Note: I have no idea how long it takes them to get to Ice Hell. I’m going to say a few days since it’s in the north of the Human World and they’re going by boat.
Note: When they’re camping, the sky looks dark, so I’ll assume it’s nighttime.
Next day: Toriko’s group continues towards the mountain. They eventually reach their destination and set up camp once more. During the night, the Bishokukai arrives and the fights begin.
Next day: The fighting is over by dawn. Toriko and the others meet Komatsu at the base of the Gourmet Show Window, where Komatsu receives the last of the Century Soup. Setsuno arrives to pick everyone up.
Sometime later: The group arrives at Life. Setsuno leaves and drops Komatsu off at Hotel Gourmet. Toriko and company meet Sunny and Yosaku; after achieving their goals, Takimaru and the Gourmet Yakuza leave. By evening, Toriko has begun to grow back his arm and Komatsu has begun to make the Century Soup.
Note: This might be the same day they leave Ice Hell. It’s hard to say.
Someday later: Komatsu leaves a bunch of ingredients to stew together for two weeks. Toriko’s healing continues.
Three months after arrival at Life: Komatsu visits Setsuno and asks her to taste his soup. At night, he leaves. The same night, Toriko moves to the next stage of his healing.
About three months later: Komatsu catches up to Setsuno’s Century Soup. Toriko continues healing.
Someday later: With Yun’s saliva, Komatsu completes his Century Soup. Toriko’s Gourmet Cells respond to the Soup and he heals completely.
Someday later: As Komatsu’s Century Soup makes headlines, Toriko and the others gather at Hotel Gourmet to eat it. Toriko adds the Century Soup to his Full Course.
Someday later: Toriko and Komatsu take the train to Life and bring Yosaku and Sunny some Century Soup. Sunny refuses to eat it.
Note: I’m going to assume the last few “someday later”s were within a week of each other. Add that to the “few days” of travel to Ice Hell, the 2-3 days in Ice Hell, and the approx. 6 months it took to make the Century Soup…let’s go with 6 months, 2 weeks (6.5 months).

A short time passes. After returning home from Hotel Gourmet, Toriko rebuilds his Sweets House. More time passes.
Note: There’s really no indication of how much time passes here. Let’s X it.

Ozone Herb (Menu 7): Est. 2 weeks

Day 1: Toriko meets with Ichiryuu and agrees to capture the Ozone Herb.
Sometime later: After dark, Toriko takes Komatsu to eat at Yakiniku Healthui in the Gourmet Towers. Komatsu agrees to accompany him to Vegetable Sky.
Next day: Toriko and Komatsu fly to the Sky Plant. On Day 1 of climbing, they reach 1000 meters [C104, P5].
Next day: Day 2 of climbing.
Next day: Day 3 of climbing; Toriko and Komatsu reach 3000 meters. Toriko slows down the pace.
Someday later: Toriko and Komatsu reach 5000 meters during daytime.
Someday later: Toriko and Komatsu reach 6000 meters at nighttime.
Note: If they were going at a rate of 1000m/day and then slowed down, they probably reached 6000m around the end of Day 7-8.
Next day: Toriko starts to carry Komatsu at 6000 meters; they begin to pass through the cumulonimbus cloud.
Sometime later: Toriko continues to climb through the storm.
Sometime later: Final day of climbing; arrival at Vegetable Sky (20,000 meters). Toriko and Komatsu capture the Ozone Herb and form a Combo before crossing paths with a Nitro.
Note: I honestly have no idea how long it takes Toriko to climb 14,000 meters, but he seems to do it pretty quickly…he’d have to to ensure Komatsu’s safety. I’d estimate 1 day.
Sometime later: Toriko and Komatsu go to IGO Headquarters to meet with Ichiryuu and deliver the Ozone Herb.
Note: It takes them about a week to reach and capture the Herb. If I add that to descent time, plane travel time, and other unknown factors, I think 2 weeks is a fair estimate.

An unknown amount of time passes. Toriko ventures into the Gourmet World but quickly returns.
Note: Again, no idea how much time passes here. X.

Melk Stardust (Menu 8): Est. 2 weeks

Day 1: Toriko meets Komatsu at an Hotel Gourmet annex. After Komatsu’s knife breaks, the two plan to seek out Melk.
Sometime later: Toriko and Komatsu arrive at Melk Mountain. After dark, they make camp for the night.
Note: Let’s assume that this is the next day. Toriko and Komatsu seemed pretty ready to go in the last scene.
Next day: Toriko and Komatsu continue climbing and eventually reach the top of the mountain. There, they meet Melk the Second, who directs Toriko to Heavy Hole. Komatsu stays behind to observe Melk the Second’s work.
Next day: Komatsu wakes up and continues to observe Melk the Second’s work. After dark, he takes a bath in the mountain’s onsen and wonders about Melk the Second’s attitude before going to sleep. Meanwhile, Toriko continues his descent.
Next day: Komatsu wakes up in the middle of the night and discovers that Melk the Second is a woman after accidentally seeing her naked. After her insecurities are revealed, Komatsu manages to convince her that she is a worthy successor to her father. Meanwhile, Toriko reaches the bottom of Heavy Hole and finds Melk the First.
A few days later: Toriko finally returns from Heavy Hole with the Melk Stardust. After dark, Melk the Second agrees to start work on Komatsu’s knife.
Several days later: Melk the Second continues work on Komatsu’s knife.
A few days later: In the evening, Melk the Second finishes Komatsu’s knife.
Note: I’m estimating that a week passes from Day 1 till Toriko returns from Heavy Hole. Add that to the “several” and “few” days that pass afterwards, and I’m estimating a total of 2 weeks.

An unknown amount of time passes (I’d guess only a few days, since Melk the First made it clear that the Mellow Cola needed to be captured quickly).
Mellow Cola - Gourmet Santa
Mellow Cola (Menu 9): 2 months, 1 week

Day 1: Toriko, Komatsu, Coco and Sunny depart on the Gourmet Carriage.
Day 2: Toriko and Komatsu get off the Carriage and pass through the Gate to the Underworld. Eventually, they arrive at Honey Prison and retrieve Zebra.
Note: The distance from the Gate to the Prison is “数十km”—“several (tens of) kilometers”—and I think they set out around dawn, so I’m guessing they arrive the same day.

NOTE: In Chapter 128, it’s stated that the Prison is currently in the Beast Season, which is from March to May. So it’s currently either March, April or May at this point.

Approx. one month later: Toriko, Komatsu and Zebra arrive at Sand Garden and venture into the desert. Eventually, night falls and they make camp.
Note: By this time, Sunny should be at the Three-Way Road, since he said he was getting off the Gourmet Carriage “next month”.
Next day: The trio sets out and arrives at the Desert Labyrinth. Komatsu falls into a quicksand pit and is sucked into the Pyramid’s basement. Toriko and Zebra make their way to the Pyramid and start descending. The two eventually find Komatsu and, reunited, obtain the Mellow Cola.
Note: When they leave the Pyramid, the sun is shining, so I’m pretty sure this happened all in one day.
Someday later: The trio returns to the Desert City and visits other Gourmet Deserts. Afterwards, they leave Sand Garden.
Note: It probably takes them around one day to return to the Desert City, and then however many days they spent exploring. At any rate, a few days.
Someday later: Toriko and Zebra come to eat a celebration feast at Hotel Gourmet.
Note: The Japanese just says 後日 (“a later date”), so it’s not clear when this is happening, but it would have taken them a month to get back from Sand Garden, and then some time for Komatsu to prepare…so probably a month plus a few days. So 2 months plus several days…how about a conservative estimate of 2 months, 1 week?

An unknown amount of time passes, during which Toriko and Komatsu run into Starjun at Bar Meria and visit the Gourmet Shrine.
Note: I’d guess at least a week or two pass here. At Bar Meria they’re talking about the previous chapter’s events like they just happened, and then it appears that they go straight to the Gourmet Shrine, which suggests a few days. Afterwards, however, Komatsu meets Toriko at his Sweets House before they go after the Surprise Apple, so they obviously split up for a time after visiting the Shrine.

Surprise Apple (Menu 10): 1 day

Day 1: Toriko, Komatsu and Terry try their luck at capturing Surprise Apples.

An short amount of time passes (they’re eating Surprise Apples in the first scene of the next chapter, so it may be the same day, but they’re wearing different clothes, so who knows).

Chiger Egg (Menu 11): 1 day

Day 1: Toriko and Komatsu visit Yocchi and eat the Chiger Egg. After dark, Yocchi tells them the story behind the ingredient.
Someday later: After Yocchi’s death, Toriko and Komatsu visit the land they bought from him and discover a newborn Chiger chick.

An unknown amount of time passes.

Shining Gourami (Menu 12): 1 day

Day 1: Toriko, Komatsu and Sunny head to Death Falls to capture the Shining Gourami. After capturing and eating it, they party through the night until dawn.

An unknown amount of time passes. Then, the following events occur:
Day 1: Komatsu reads the monthly Top 100 Chef Ranking and visits Ootake. Meanwhile, Toriko and Coco obtain Ichiryuu’s Full Course hors d’oeuvre.
Note: Komatsu is reading a monthly magazine with a small number 8 on it. If “8” is the issue number, could it be August?
Note: Toriko and Coco then proceed to capture six more of Ichiryuu’s Full Course ingredients, so I’d guess at least one or two weeks pass while they do so, maybe even more.
Several days later: Ootake is kidnapped by the Bishokukai.
Someday later: Komatsu meets Toriko and Coco at a Gourmet Salon. The trio then set out to obtain the Meteor Garlic. Meanwhile, Ichiryuu arrives at the Bishokukai’s Dining Kitchen in order to meet with Midora, but quickly leaves after Midora refuses to make peace.

An unknown amount of time passes (again, probably only a day or two, but it could be longer if the Jidar Kingdom is far away since they’re traveling by train).

Meteor Garlic (Menu 13): 1 day

Day 1: Toriko, Komatsu and Coco get off the Underground Train at Jidar Kingdom. At dusk, they come to the Gourmet Casino, where they meet Match and the Gourmet Yakuza. Forming an alliance, everyone enters the Casino and eventually beats Livebearer in a game of Concentration. At night, they eat the Meteor Garlic and go to the Jidar Kingdom Royal Palace only to find it empty.

An unknown amount of time passes. Then, it’s December 24! So everything from the Mellow Cola arc to now happened from March-May to December 24.
December 24: Toriko, Komatsu, Coco, Sunny, Rin and Mansam perform Gourmet Santa duties.
Madam Fish - Cooking Festival
An unknown amount of time (X) passes.

Madam Fish (Menu 14): Est. 2 days

Day 1: At the 2nd Biotope, Toriko tells Komatsu about the Ehou Maki and receives the info about the Madam Fish.
Sometime later: Toriko, Komatsu, Coco, Sunny, Zebra and Rin arrive at Pot Pond and capture the Madam Fish.
Note: Let’s assume that they left for Pot Pond immediately and got there the next day. 2 days.

A unknown amount of time (X) passes. However, it’s probably a short amount of time, since they’re talking about the Madam Fish at the beginning of the next chapter.

King Vinegar (Menu 15): Approx. 10 days

Day 1: Toriko and Komatsu arrive at the Heavy Drinker Archipelago and cross paths with Jirou.
Day 3 or 4: Toriko and Komatsu’s party with Jirou ends.
A week later (Day 10 or 11): Toriko and Komatsu finally obtain the King Vinegar.

An unknown amount of time (X) passes.

Dodurian Bomb (Menu 16): Approx. 1 month

Day 1: Toriko and Komatsu eat with Teppei and learn about the Dodurian Bomb.
Sometime later: Toriko and Komatsu get off the train at Dodurian Station and walk towards the fruit; night eventually falls.
Next day: Toriko and Komatsu reach the Dodurian Bomb.
About a month later: Toriko and Komatsu finally capture the Dodurian Bomb.

An unknown amount of time (X) passes.

Eco Nori (Menu 17): 5 days

Day 1: Toriko and Komatsu visit the Gourmet Knights and walk to Eco Land. After dark, Toriko starts to obtain the Eco Nori.
Day 4: Three days later, Toriko finishes obtaining the Eco Nori. After dark, he and Aimaru catch up and talk about GOD.
Note: In the volume, a scene is added in which they stay an extra night.
Day 5: Toriko and Komatsu leave the Gourmet Knights.

An unknown amount of time (X) passes.

Bubble Fruit (Menu 18): Est. 3 weeks

Day 1: Monchy starts making the Ehou Maki.
Day 3: Two days later, Monchy finishes the Ehou Maki; Toriko and Komatsu begin eating it and continue through the night.
Note: I can’t be certain that it only takes them a day to get to the Lost Forest, but night-to-day panels have been pretty literal so far, so that’s what I’m going with here.
Day 4: Toriko and Komatsu arrive at the Lost Forest, happen upon Disappearance Cuisine and eventually arrive at Shokurin Temple, where they begin training with Shuu.
Day 5: Shuu introduces Toriko and Komatsu to basic training exercises.
Day 6: Toriko and Komatsu’s Ham Flower finally buds; they begin daily training all over again. At night, Toriko is encouraged by Komatsu’s words.
Day 7: Toriko and Komatsu begin to advance in their training.
Someday later: Toriko and Komatsu, having mastered the top-class course in Food Honor, begin training under Chin. Toriko begins to walk with Chin down Bubble Way.
Note: I’m really not sure how long it takes them to finish, but they began to see big results from their Food Honor training in about three days and they apparently finish learning it very quickly…let’s go with 1 week.
Several days later: Toriko is still walking down Bubble Way; he has lost 50 kg.
Someday later: Toriko is still walking and has lost 100 kg. He eventually collapses from hunger, but in the end is able to learn Food Immersion and obtain the Bubble Fruit. Meanwhile, back at Shokurin Temple, the Bishokukai arrives and begins to attack. At the climax of the battle, Toriko returns and the Bishokukai retreat. After the battle, Chin is healed and says he plans to contact the 0th Biotope.
Note: Let’s assume this is also several days later, since it took Toriko “several days” to lose the first 50 kg. So approx. 1 week for the journey down Bubble Way, plus the 2 weeks before that: 3 weeks.

A week passes. During this time, Ichiryuu meets with the members of the 0th Biotope in the Gourmet World after being contacted by Chin. Meanwhile, Komatsu spends the week at Disappearance Cuisine learning how to cook the Bubble Fruit and other Special Preparation foods.
Note: Rala says that the Cooking Fest is one month away in the 0th Biotope scene. He also states that the Gourmet Eclipse will happen in six months at the earliest.
Note: One week before the arrival of the Four Beast, mankind is notified of the situation.

Four Beast (Menu 19): 1 day

Day 1: The Four Kings fight and defeat the Four Beast. Teppei confronts Joa.

Approx. 3 weeks pass, during which:
Three days after the Four Beast: Teppei wakes from his “dream”. Meanwhile, the Four Beast after party continues. In Gourmet World, Ichiryuu and the 0th Biotope begin to capture Acacia’s Full Course.
Several days after the Four Beast: Komatsu ranks in at 88th place on the IGO’s World Chef Ranking. Meanwhile, Toriko completes Nail Gun, Mahmai Moi and Nakaume return from a six-month space voyage, and Joa travels to the Gourmet Pyramid for the Cookbook only to find it missing.
Note: The narrator says “a few weeks later”, but since Rala said that the Cooking Fest was one month away in that previous scene, approx. 3 weeks must pass here.

Cooking Festival: Est. 1 month

Day 1: The Cooking Festival begins and unceremoniously ends when the Bishokukai attack. NEO reveals themselves. Komatsu is captured by Starjun. Meteor Spice devastates the Human World.
Several days later: Coco tells Sunny and Zebra about his strange discoveries regarding the planet. Meanwhile, Jirou visits Toriko and tells him of Ichiryuu’s death.
Several weeks later: Toriko recovers his determination and enters the Gourmet World in order to rescue Komatsu.
Note: 1 day + several days + several weeks = ? Let’s be conservative and go with a month.
...Phew! I did this mostly out of curiosity, but I decided to post it because I hope the fandom can use it somehow. If there's anything I got wrong or missed, let me know.
