Was there some sort of reprint with different covers? I remember reading Hikaru no Go years ago, and the covers were nowhere near as awesome as those.

Those covers are from a new edition, a kanzenban which costs like 1000yen (vs the 400 or so yen of the tankoubon), it has better quality paper and includes color pages.

It's no news comming from Togashi, I believe he likes to represent characters with an animal (Which is kinda funny because Ging on the Zodiacs is the Boar).

Killua was associated with Wolf at volume 17 cover.
Kurapika was associated with an Owl at volume 18 cover.
Leorio was associated with a Golden Fish at volume 19 cover.

I think is a reference to the story of why the cat isn't in the chinese zodiac (the Zodiac 12 in the manga). You can find something about it in this article from Wikipedia
