For myself, it would have to be Rock Lee - Gaara fight in the Chuunin Exams.
One of the more amazing battles I've read about in any manga - and it came as completely unexpected, because I didn't expect Rock Lee to be one of the more enduring characters in the series, nor did I think Gaara would be challenged by anybody yet at that point in the series.
As the battle waged on, though, I couldn't help but admire the turns and twists of the battle - AND Kishimoto's art.
So many memorable scenes from that match-up ... as well as a very emotional ending between Gai and Rock Lee. At the time I didn't think anything could top the ending of the Hinata - Neji (and Naruto's promise, lest we forget!) as far as emotional endings, but Kishimoto surprised me big time.
Left me completely breathless. The Chouji - Dosu fight by comparison was almost an afterthought, wasn't it?
About the only other battle that almost topped it for me was the Kabuto - Tsunade - Orochimaru - Jiraiya - Shizune - Naruto battle. Especially when Naruto defeated Kabuto.
