He's not galaxy level, the wiki likes to exaggerate. He can open worm holes and shit though, he can destroy artificially constructed worlds and potentially reshape the earth.
I agree galaxy level is too much but he is solid planet level with the full power of Enuma Elish (Ea is an Anti-World Noble Phantasm, likely capable of overpowering Akhilleus Kosmos, which embodies the World. ).
Even that might be too high, Akhileus Kosmos would almost certainly be destroyed, but thats far from an actual planet, especially since the planet itself in the FSN verse is an incredible, almost sentient, power, far beyond Gilgamesh. Though i do recall in Fate Strange Fake that Gilgamesh's clash with Enkidu was said to destroy and reform the world, but who knows whether thats hyperbole or not.
Even in Anime Gil is above Meliodas.

Well that's true,I heard he only went all out against Karna whom he consoconsi a strong warrior and Enkidu his best friend.
Gilgamesh has a passive Noble Phantasm which essentially acts like a scouter, if he sees Meliodas is strong he’ll wash him.
