I get your point that Oda's artwork can be quite busy at times, I personally consider it a strong point of his, I will always prefer a busy panel over blanks like in BLEACH where Tite drew nothing but characters.
I think Oda is a good panelist, I have never had trouble understanding what's going on on a battle, for example sometimes while reading Naruto I had to like double-check pages, I guess Kubo Tite is better at conveying action than both of them, but at the same time, Tite drew like entire pages for action sequences way too often.
As for my opinion on One Piece, I already stated that I think of it as literature of the highest caliber. But it has some pacing issues, especially with how Oda likes to make lots of different characters be battling at the same time.
As for its story, I enjoy it, it's my favorite serial right now, has been a staple for me for like almost 15 years. It hasn't always been the manga I look forward to the most week by week (At some point Bakuman was, Shokugeki no soma too and now it kinda is One Piece since it's the only one I read weekly).
As others have said reading One Piece becomes like a ritual, like something you do just because you are so used to it that... You just do it, like seriously I feel weird whenever there's a new chapter and I haven't read it, like if you forgot to brush your teeth, the "Did I forget something?" sort of feeling. But I know for a fact that I still love One Piece, I used to love Naruto but stopped reading it when it was boring to me, that only happened during Zou for me with OP, but I continued reading afterward.
