I don't even understand how people are thinking that's a possibility, this manga has literally never even stated being the best demon slayer as a goal for anyone other than human kokushibou lol... the whole focus was on killing muzan after which demon slayers and demons collectively become redundant, thus concluding the story. I feel like everyone's reading way too deep into it: the manga has always had a straightforward, simple premise and aim which it hasn't ever deviated from.If they pull an Yhwach, Kaguya or anything like that it would ruin the entire story. They better just give us a Muzan backstory enlightment before he dies - we need to know who, how and why that doctor gave him a demon transformation medicine - and that's it since it's in the final arc and battle.
As far as we know, Nezuko is human again. The only demon that could walk on the sun and achieved Muzan's ambition is now human again. What if Muzan, just as he is about to die, do something that involves her? We have to wait.
Also I don't think Tanjiro need to be the greatest for it to end perfectly. Just like you, I'de be happy to see a different conclusion.
This isn't Naruto or MHA or whatever (bEcOmE hOkAgE!1!), in KNY the protagonist's two absolute goals established throughout the whole series have always been to bring down Muzan and turn Nezuko human - one has been achieved and the other will be fulfilled soon enough. Think about Hantengu (UM4), where Genya wanted to kill him to become a pillar first and Tanjiro just let him because he doesn't care; he doesn't want to be the strongest for the sake of being the best, and wants to work with everyone else for a common goal. Even when they say they want to become a pillar, you can't even call it a goal really as it's for the purpose of being able to kill Muzan.
Given how destroyed the demon slayers are in their current state, even after they defeat muzan, get some bs timeskip, it just wouldn't make any sense that Gotouge would introduce some more powerful demon as the true antagonist or something. Just my two cents.
P.S . For everyone referring to the popularity poll in August as evidence, they could literally just show the results in the issue even after the series has ended, it's in no way a confirmation that the series will continue until then. Also remember that we will 100% have an arc after Muzan showing how everyone is doing, which could lead to spinoffs, etc. Again I wouldn't read so much into it...
