Apple & Rose Mascarpone Mousse Verrine Recipe

Ingredients :

3 apples ( I have used Gala)
1 tbsp of rose jam ( original recipe was with honey but i wanted a touch of spring with a touch of flowery taste)
2 tsp of butter
6-8 speculoos
250 gr of mascarpone
2 eggs
1 tbsp of confectioner’s sugar
vanilla extract
cinnamon (optional)

Directions :
  • Crush the speculoos using a mortar and pestle,or in a plastic bag using a rolling pin.

seared apples
  • Wash, peel, and dice the apples. Brown them in a pan with some butter. After a few minutes of cooking, add the rose jam and cinnamon if you wish. Cook over low heat until apples are soft, browned.
Mascarpone mousse
  • Separate the egg yolks from the egg whites.
  • Beat the eggs yolks with he sugar and vanilla if desired, until the mixture becomes pale. Gently whisk in the mascarpone
  • Beat the eggs whites until they form stiff peaks. Incorporate them into the mascarpone mixture gently. Set aside.

Serving
  • put a layer of crushed sepculoos in the bottom of verrines, then add a layer of mascarpone, then a layer of apples, Decorate with wallnuts.

With remaining mascarpone mousse and speculoos, i did a Tiramisu.

-Sources and credits : me , recipes done by me too, here are the original pics which really dont do justice to the dishes (pic 1, pic 2) I have taken i just wanted to do a special presentation, like you have on cooking websites.

-Honestly both recipes were great, that said i was disappointed by the rose jam, it has almost no rose flavor, or it was not noticeable, too bad i wanted just a little touch of rose fragrance, but the taste was overall really good.

- As for the smoothie, i tend to add just a little of milk to lessen a little the acidity of the fruits.

5 dl Flour Pinch of salt

TOMATO SAUCE:
1 Can Crushed Tomatoes
2 Crushed Cloves of Garlic
1 tbsp Olive Oil
1 tbsp Balsamico
½ tsp Dried Basil
½ tsp Dried Thyme
Pinch of Salt
Pinch of Black Pepper

TOPPINGS:
1 Pack Beanit®
Fava Bean Chunks
OR
1 Can Fava Beans

½ Zuccini
5-6 Aspargus’
7-9cm Leek
2-3 Button Mushrooms
150g Shredded Pizza
Cheese
1 Can Pineapple (Optional)

Directions:

PIZZA BASE:
1. Dissolve the yeast to hand-warm water
2. Mix in rest of the ingredients and
knead the dough until smooth and elastic
3. Let it rise like a 2018 ninja turtle under
a cloth
4. Roll or press by hand on the full size of
the oven sheet (Baking paper underneath)

SAUCE:
1. Put the oil in a pot and put it up to mid
heat. Sauté the crushed garlic in the oil
for short while.
2. Mix in rest of the ingredients. Let it
simmer for 20-30 mins on middle heat
3. Let it cool down before putting on
the pizza

PUTTING IT ALL TOGETHER:
1. Spread the dough on a baking paper on an oven sheet. Spread the sauce evenly on it.
2. Slice the zuccini, mushrooms, leek and pineapple. No need ot cut the aspargus.
3. Spread the toppings evenly on the pizza. Cook on the bottom level of the over at 250°C
untill done (10-14 minutes). The leek is the most likely to burn, so you might want to add
it in in midway of baking.
