If Mirajane in her weakest form while quite injured can give Gray going all out (without POF) extreme diff, then I see Mira at full power low diffing Gray, Gajeel and the like so surely she can low diff Lucy, Elfman, Wendy etc.

Gray vs Mirajane wasn't an extreme diff tho. An extreme difficulty fight would Erza vs Misaki or Lucy vs Kyria. Even if Erza and Lucy won, it cost them all of their magic power and they collapsed after the fight. Didn't happen with Gray.
Like if you compare it to Natsu vs Gajeel, Gajeel admitted his loss but he wasn't knocked out. Natsu said he was low on MP and was badly injured. While Mirajane was actually knocked out and defeated, and it didn't took Gray a lot of MP nor was he that much injured, even if he legit struggled. Natsu still had power left to Wraith and Aldoron so his fight with Gajeel was a high diff at best. Mira vs Gray was somewhat less than that, somewhere between mid and high diff.

Extreme diff? Gray didn't use DeS magic against demon. It looks more like Gray tried to be kind with Mira no to make her feeling pain. Smiling Mira in the end of the fight is a proof.

No that's not proof of anything.
Gray used DeS against Demon Freed who was weaker than him why would you believe that he failed to use DeS against Mira who is stronger than Freed and even Gray? LOL. There is no evidence that he failed to use DeS while there is evidence that he did i.e. Juvia saying he did his best and him using it on Freed.

He struggled to beat her while she was heavily injured and he was stated to have done his best. It may not be as close as Erza vs Laxus or something but the authorial intent is clear. BSS Mira is way more powerful than Gray and we all know her higher forms low diff BSS.
The fact that he was struggling and panting (exhausted) after giving his best according to Juvia does not make this mid.

Mira is so overrated lol, even if you think she wins she has no feats that shows she would be able to do it easily. Lucy's massively improved since their fight earlier in the series, while Mira's shown nothing and her not being able to beat Skullion has aged terribly

Gray used DeS magic cause he can't use Ice make magic. Freed made magic barrier, remember? DeS magic is specific. That's why Freed's plan ruined.
Where is a problem here?
In addicion to it Gray used only his fists against Freed. Without ice. Same story with Bickslow and Evergreen. He cares about his friends. So yes. I think Gray was galant with Mira
