how to delete the background text in this picture and put some text in it

It's called redrawing ^^"
You have to draw over/instead of the japanese text what the text was "hiding" then typeset the english translation over the parts you've redrawn.

http://www.sendspace.com/file/0l9xpb <--- here's an example to what you can get in 10 minutes of work. You don't have to put lots of work into your redrawing because the english text will hide most of it eventually.

Oh you mean the stroke? there's a typesetting tut in the tutorials section, you might wanna check that one out.

Looks pretty cool to me. As for translations, you might want to ask some of the translators we have on hand here in their own section ( check out Translator Central in the sidebar menu. ) Go to any one of their Ask Me threads in the 'Meet the Translators' section. Or you can make a request in 'Translator Requests.'

However if you're considering Editing the first volume and onward, I just have to say that it may get you in trouble with Viz. In any case, nice work and hope to see you around.

Also, if you're planning to re-draw that double spread, you might want to take a screenshot from episode 1 and use it for reference.

Good luck re-drawing , It looks like a lot to redraw, But i'm sure with enough time...and effort you can do it.

And Viz might get mad, but chances of you getting caught are slim, so good luck .
