Meliodas mind not being able to be read telepathically hasn't been explored either and makes no sense. At least with Merlin we were told she has the blessing from the Supreme Deity and naturally empowered her spirit with it. Meliodas? Nah fam, he's chill af nuff said
It does, it just that you can't read it because no one knows what he is thinking inside of it, several times, it has been pointed out throughout the series

That's logically impossible though. As a sentient being, you're always thinking of something. So that excuse doesn't really work.
