OK, but they don't have many connections, themes is normally only focused in 1 or 2. Character interactions is also not many, nor highly labored. They are good and well made stories, with intrigue that brings a ton of expectations. But I wouldn't in any way call them complex.
Also note how complex means having many branches(of what that is goes with what you're specifically talking) and so being hard to understand and complicated.
That is why I told that being complex is not a good thing. A story being hard to understand is not a good thing and it being complicated isn't either. I don't think that Full Metal Alchemist and Attack on Titan are hard to understand nor complicated. In fact I think they are made in a way where they are so easy to understand and are highly simplistic. They show and go for things in a simple way and in that way place the readers really immersed.
The reason why people love to talk about complexity. Is mainly due to the one person that understand what other think is hard to understand and complicated, seems superior. Like they are in another level. And so you're elite if you go for complex and complex is what is good. This is basically the thinking of kids that want to do adult things, like smoke and drink early, just to show their friends and others that they are so much up there in the ladder.
Unfortunately this is not only a phenomenon of "stupid" kids and teenagers. A ton of so called "intellectuals" also have this mentality. And so a lot of things are over-engineered in our current society.

Something can't be complex and not complicated. Complex is a superset of complication.I think it is more how Oda handle things than anything else because One Piece could be very complicated if it were not for his good storytelling. He knows how abstract things for the readers, there are a lot of pending things to solve in the story, but we don't worry because he will come up with them eventually. It is complex, but not complicated, it sounds crazy, but that's what it is. Attack on Titan is an example of badly handled complexity, I dropped because I was not understanding anything, too many questions and no answers, overwhelming amount of information and so on.
Story lines can be compared with this. I LOLed Gintama. XD
Probably you want to say robust. It has many branches. Though it still keeps itself simple. In fact is a really big achievement how Oda was able to put so many things into the series while still keeping it simple, exciting and digestible.
The explanation of Gintama is funny, but in no way accurate. Gintama is a mix of linear storytelling and comedy like Bobobo bo Bo-bobo. It bring references of other stories for comedy, but it really doens't uses their plot in any way.
From where did you read Attack on Titan? Mangastream? Well, their translation in some parts of the story was so horrible that it made the story highly confusing. Try go for the official translations or translations in the anime, and you see things in a totally different way.
