I don't think it's stress, but nerve damage seems like a stretch. I think it may be frustration with the fact that he gets to magma punch pirates less and less. Now he's forced to be the voice of moderation on things he would have been excited to do when he was an admiral. I imagine for instance, that Akainu would have found a coniving excuse to kick Doffy's ass himself and get around the shichibukai status (something squardo vs whitebeard style).

There is no indication that Akainu actually enjoys punching pirates. He doesn't seem to be a sadist. He is violent, for sure, but the violence is always a means to an end.

Fujitora could have found an excuse as well if he wanted to. Admirals have the authority to obliterate islands by just pressing a button and with no reasons given (Buster Call), and Fujitora did stripe Law from his title.

I don't think he enjoyed it either. I think it's more about not being able to exercise his convictions properly. I think him seeing behind the curtain may be messing with his ability to do his job with the same drive he used to have.

Sengoku though seems to be a good hearted man, but also a man of the system. In the end he quitted because the WG gave an order he couldn't follow anymore (hiding the LV6 escape). I think he grayed out because of the inner conflict inside him. In the end he adopted Garp's carefree personality to release himself from these conflicts. Remember he also sent his adopted son on a mission way to dangerous for him. Rosinante was clumsy and not much of a fighter, at least nowwhere in Doflamingo's league and they already had the intel that Doffy killed his father. In the end Rosinante died and fucked up the mission as well.
I don't think he was pleased either that Akainu destroyed the escape ship that he prepared during the Ohara incident. There's many instances were we can assume why the job was hellish for Sengoku, but none of these points can be applied for Akainu.

Akainu never had these issues, he believes the end justifies the means. He only gets pissed when the marine's image gets damaged (Dressrosa). He was very composed for the majority of Marineford arc in the middle of war, but now can't even talk about the Wano Country without looking super duper angry.
