It's gonna be none of them. The studio that will actually adapt the anime is Passione, the animators of High School DxD and Citrus lulz. So I am kinda imagining how that will even look like lmao. xd
Considering that Higurashi has many timelines that can be taken into consideration due to the sea of fragments, and there is always room for more timelines. Not to forget how huge the VN of Higu is, I am rather not surprised that they decide to come with a new project for Higurashi instead. But it does leave some hope for a re-adaption for Umineko at this point. Not many expected a new project for Higu, so that is good news.
I would definitely prefer a remake over an entirely new story, but anything Higu should be great.
Need to catch up with the Higu manga as well, but as much as I love the anime sometimes I wish it got a better adaptation in some scenesCaroline and Justine avas for Asa and Elu, that's way too fitting

About Umi, I think it's obvious why it hasn't been touched since the first anime. For one thing, it's far more difficult to properly adapt. All the meta stuff and weird shenanigans are really hard to portray properly while also sticking to some very important rules, like
I believe, Shanon and Kanon never appearing together when Battler is at the scene.
Not to mention that it has some very touchy topics, even for a Japanese work. I'm sure everyone who's read Umi knows what I mean. Add to that how it's a mostly adult cast (hence way less opportunity to pander to the otaku crowd), and you have a whole bunch of reasons why Higu is the more popular work (and also the more well received from the japanese side, as far as I know).
An Umineko remake would be damn awesome though
Which is why I'm so hyped, curious how the voice cast will go too.
