However I recall the author saying he would change the ending if someone guessed it... :/
It's a lie anyways.
GRRM, the author of ASOIAF has a famous quote about it.
You write a crime novel and place all these little hints that the gardener is the murderer. Then some clever readers find it out before the end. If you then change the ending so that the murderer is the chamberlain, well then your entire novel won't make any sense.
No fiction author can change major details in his story, let alone ending related ones. Oda has also said that he already has the ending in mind since the very beginning. Impossible to change that.
Oda likely placed this lie, because the further he gets to the end, the more he has to reveal about it before, increasing the chances of someone revealing it. In general Oda lies a lot or speaks very cryptical to conceal things.
However most One Piece theories are terrible. The authors don't even bother to look up wether their findings can be linked to One Piece or Eiichiro Oda at all. The fandom circles around some more than questionable YouTubers who essentially just talk about their headcanon rather than finding out anything.
The majority of the community can only see Eminem when looking at Enel, they can't see Enlil or Raijin, because they lack education in these fields.
And even those familiar with these things typically lack others. I, for example, am very familiar with western history, I know the outline of it for all my life. But I am rather unfamiliar with Japanese history and to be honest I think it is super boring and full of revisionism, which makes it very unlikely that I ever get into it. Had I done, I would have predicted that Kanjuro is the traitor, it is a reference to Japanese history.
As long as it is like that, I wouldn't fear any major ending details being spoiled to the majority of the One Piece community anyways.
