The water did not combust there (water does not combust in general). The water in that video simply evaporated from liquid to gas. But okay, evaporating water does not create ash. We can agree on that. What exactly is this supposed to prove in regards to Natsu being nerfed?

Totally disagree.
Natsu feats - like "Challenger" in new GMG, vs Bluenote, vs S12 was above everything he did in sequel.

We don't even have to use physics to explain it. Happy simply said fire magic doesn't work in water. Skullion, unlike Natsu, isn't burning stuff to create ash. His magic simply transforms stuff into ash. Natsu needs his fire magic to burn stuff, and it doesn't work underwater.

Lame explanation. For turning something into ash, it should firstly be able to be turned into ash. And with water you can n't do it. So how he did it... "magic".
But same "magic" did not work for Natsu.. and his magical fire should demand physic laws. Funny,
1) Yes he used a casual roar on Bluenote who's low tier mage. What do you want him to use a casual roar on the Water God Dragon? The stronger the enemy, the stronger the spells that will be used.
2) Metal is weak against Fire anyways so what's your point? Natsu was underneath a whole ocean it makes sense his fire can't evaporate the entire sea the way you want it to be. In the sequel, Natsu clearly states his fire will melt Gajeel's Iron. Last time I checked, Water>Fire in real life since you love your elements. Hypothetical, if Gray was fighting in a volcano, is he nerfed if he can't freeze it, no, it just means the surroundings are against him. Him not being able to boil a whole ocean isn't being nerfed.
3) Again, the stronger the mage, the stronger the spells, he needs to use FDK fist against Madmole since nothing else would work. Doesn't mean he's nerfed, it means Madmole's tankiness is just that good.
All your "feats" are proving nothing. So because his FDK roar didn't work on Mercuphobia but his casual worked on Bluenote that's supposed to mean something? Are you trying to scale Bluenote to a God Dragon?
List of sequel feats:
Put down Madmole (who has incredible tankiness and heat resistance) for a bit with a spell that would one shot most mages.
With Ignia's flames, made the Water God Dragon look like nothing and completely dominated him.

How is beating up Sting and Rogue (who didn't live up to the hype) better than that? How is beating up a low tier mage in Bluenote better than that? Enchanted Neinhart was nothing special, Jacob was a decent feat but Jacob is mostly hax anyways. The only feat you could argue is Dimaria but that alone isn't enough.

Significant things can happen in one year. Alvarez Natsu and Tartaros Natsu is like completely different tiers and it was only 1 year. Where are you basing off your numbers?
It's also with Bluenote, during Tenrou he was top tier and comparable to Gildarts. During Pre-Alvarez, he's shown barely any improvement and was oneshotted by a casual roar. Improvements happen, and decrease in power happens too
In manga, compare scale of Natsu attacks with his body and environment (i posted links on original and on sequel before). Current attack looks more tiny.
It is simple, all semble ce of what is strength for Natsu from Alvarez is not present in this series, he did not even perform the same impressive feats he did in Alvarez, that is explanation enough
