Never said I had issues him fighting with those hand to hand. I think your misunderstanding point of talk as we talking about if Sanji and Luffy face swordsmen opponent who is more high level, do you expect them to stop fighting and run away? They don't care and will beat them the same like weapon users in the past. Not saying they won't struggle, but they won't be defeated or choose to think they can't win when there are ways they know how to get passed them. Saying they shouldn't is limiting them who they face as we are in Wano and almost everyone have a weapon especially a sword. Are you saying Luffy and Sanji will not face anyone in a fight with weapons especially blade?We've had this discussion before and you keep mentioning it again, which means we're going around in circle. So I'll just address the newer parts of your post as I have no intention in beating a dead horse.
To answer the bolden part of your post, it's perfectly fine for you to say which you prefer but don't act as if a profficient swordsman wouldn't be a less suitable opponent for Sanji than someone who fights hand to hand (or tail or feet as the case may be). In particular if said swordsman is yonkou commander.

Oda will more often than not write the fight in order to suit each SH's strength, this has always been the case regardless of whether they've fought opponents whose style didn't suit them before (Raisin, Judge, Daifuku's genie, Ikaros, etc).
One of the reasons I doubt Sanji (or any SH right now) can individually defeat an All Star is because we've not seen him be pushed or show his current potential post timeskip, so I'm not confident he can take on an opponent of a level his captain had just struggled to beat in a previous arc with help.
We all saw Luffy get defeated by Kaido by a spike club, so do you think Luffy would no go after him no more? That's not the case and Oda isn't pushing narrative they can't beat anyone or afraid to challenge someone with a weapon. That's what we discussing than who is possible to face them.
I get what you mean there is pattern to Oda where he also make suitable for something they are used to the most, but they won't have luxury facing someone like that especially in All-Out War so they will come to overcome those weapons or not in their wake to win the war. I am just saying we shouldn't underestimate Sanji thinking he doesn't have anything to show since like you said, we never seen his own full power and capabilities and after training along with modify RS, doubt Oda use it as only means for T6H when before that Sanji own PO and fight handly with Drake. Oda pushing him for something much greater than them which looking to be All Stars being King and Queen who he could face either one.
Not saying it has to be only solo as I see team up fights too as I said the same with Luffy and Zoro who they be facing as they won't solo themselves especially what last chapter shows. I am not arguing against what your points are like that, but saying we shouldn't not demmen unexpected and possibilities as if Luffy stated he wants Kaido despite what we seen, Sanji and Zoro would follow in toe to at least be YC lvl if Luffy need to show he can be on Yonko level.
You get where I am going on talk? Wasn't repeating anything nor saying who they face by formula pattern is wrong, but just that Oda can be unpredictable when we least expect it, so you never know and he could surprise us how characters do the possible facing against someone we didn't thought before they could. Just saying.
