Recipe:
Chinese Chicken Curry (Serving for 4)
2 pieces of chicken thigh with bone
12 small onions
1 large potato
1/2 small carrot
1 piece of ginger
20g of curry powder
1/2 teaspoons of salt
3 tablespoons of cooking alcohol
2 tablespoons of sugar
Chicken stock*
*Chinese chicken stock is dissolved in water

(1)Cut the chicken thighs into chunks. Cut the potato into 1cm thick slices, and then into halves. Cut off the edges slightly. Also cut the carrots into chunks. The ginger should be 1cm slices.
(2)Pour enough oil into the wok to cover the chicken. Slowly fry them at around 100C until they turn light brown.
(3)Take out the chicken, and then lightly fry the potatoes, small onions, carrots, and ginger.
(4)Change the oil in the wok, and stir-fry the curry powder.
(5)Put all the fried ingredients back in, and add the chicken stock.
(6)Simmer for about 20-30 minutes on low heat.
(7)Turn off the heat when the chicken is thoroughly cooked and the edges of the potatoes are starting to get soft.
(8)Serve.

You should fry the ingredients in order to prevent the loss of flavors.
Because broth comes out of the bones, chicken thighs with bones are used for more tasty curry.
