Recipe:
Kai Phenang (Serving for 4)
Chicken, 1kg
Salt, 1/2tsp
Black pepper, 1/2tsp
Garlic, 1 slice
Coconut milk, 1 can
Cumin seeds, 2tbsp
Coriander seeds, 1tbsp
Red chili pepper, 3
Light soy sauce, 1tbsp
Sugar, 1 and 1/2 tsp
Crushed peanuts, 1/3 cup
Shrimp paste, 1tsp
Lemon juice, 1tbsp
Coriander leaves, variable amount

(1)Mix salt, pepper, and grated garlic with the chicken. Pour the liquid parts of coconut milk into a pot. (Take out the solid bits.)
(2)Put (1) into the pot, and boil on low heat with the lid on for about 30 minutes. Turn the chicken over, boil for 30 more minutes, and remove.
(3)In a frying pan, saute cumin seeds, coriander seeds, shrimp paste, and red chili peppers until their respective smells become apparent. Grind them in a pestle.
(4)Add soy sauce and sugar to (3), and then pour everything into the pot for (2). Also add in crushed peanuts, and stir once in a while for 2-3 minutes.
(5)Take the solid bits of the coconut milk from (1), mix them back into the pot, and boil for about 5 minutes. Place the chicken from (2) back into the pot.
(6)After boiling for 10-15 minutes, add lemon juice, and pour into a plate. Serve with finely chopped coriander leaves.
