When I was a kid, he’d give me strange fruit as snacks, or for tea, it was that tea made from weeds or something. To top it off, he even made me smell a leather belt for an hour. He made me suck on a knife or a pencil and remember the taste./ What was all that for?// Hama- Yeah, even I couldn’t stand that.

Miyabi- Well, for wine, the quality depends on the year the grapes were grown.// Even still, letting it sleep for years and mature after being bottled―
味わいが奥深くなって酸味やタンニン/つまり渋みもこなれてバランスの取れた美味しいワインに変わるの
develops a deep flavor, and the acidity and tannin,/ to say, the dryness, mellow out and it becomes a delicious, balanced wine.

You see, ’99 was an ideal vintage for raising grapes and making wine in the Burgundy area in France.// But in ’00 there was a lot of rain and the quality of the grapes were not so good.
その素質を使ってワインを作った結果こういう違いが出たってわけ
So the result of making wine with those grapes is the difference between the two.

先に飲んだスカスカが夏紀が最初に選んだ’00年//今 おいしいって言ったほうがさっき酸っぱくて渋いって言ってた’99年ものよ

えーっ!?どっちも全然違うワインみたい//そのビンに移し替えただけでどうしてこんなさが出ちゃうの

このビンはデキャンタって言ってワインを「開かせる」//つまり 一気に空気に触れさせ熟成を進めて飲むための道具なの
Miyabi- This bottle’s a decanter and it ‘lets the wine open’.// It’s basically for letting the air touch and mature the wine at once to drink it.

今あたしは同じようにこの2つのワインをデキャンタに移した
Just now I poured both of these wines in the same way into the decanters.
すると もともと活きのよくない’00年は開けた直後はまあ何とか飲めたけど//デキャンタージュしたことで熟成というより酸化が進んでと年老いてしまい/かえって香りもコクも花がしぼむように劣化してしまった
After opening the ’00 wine, which from the start wasn’t very lively, we could somewhat drink it.// But the decanting, which more oxidized and aged it rather than matured it,// even more so made the aroma, the body, the bouquet, kind of wither and go bad.
逆にこっちの’99年物は葡萄の出来がよくもともと高いポテンシャルを持っていたからこそ/開けた直後ワインが「閉じた状態」でイマイチに思えた//ところが今はデキャンタージュによって花開き/本来のワインのおいしさを充分に楽しめる状態になったってわけ
In just the opposite way, since this ’99 wine was made from good grapes and originally had high potential,/ right after opening it the wine was ‘closed’ and you didn’t think much of it.// But from the decanting, the flowers opened/ and you could fully enjoy the original flavor of the wine.
でもこれは中級ワインだからあたしの下手なデキャンタージュでも開いてくれたけど/もっとレベルの高いワインだと一筋縄ではいかない―
Still, since it’s a second grade wine it opened with my clumsy decanting./ But nicer wines are much tougher to handle―

A note about some of the names:
Kanzaki Yutaka: The characters for Kanzaki mean ‘god and blossom’. The characters for Yutaka means ‘abundant aromas’.
Kanzaki Shizuku: Like his father, his last name is ‘god and blossom’. His first name, Shizuku, means ‘drops’.
Shinohara Miyabi: Her last name means ‘purple field’. The characters for her first name haven’t been given, but ‘miyabi’ means someone that has refined/sophisticated senses and often understands and reaches peoples hearts, especially about love.

wonderful…….// This is really pretty good.// Which is which?
先に飲んだスカスカが夏紀が最初に選んだ’00年//今 おいしいって言ったほうがさっき酸っぱくて渋いって言ってた’99年ものよ
Miyabi- The one you said was light, that’s the ’00 one you picked before.// The one you say is good is the ’99 wine you called dry and sharp a bit ago.
えーっ!?どっちも全然違うワインみたい//そのビンに移し替えただけでどうしてこんなさが出ちゃうの
Ntsuki- Eh!? Both are like completely different wines.// How’d they get so different just from pouring it in that bottle?
このビンはデキャンタって言ってワインを「開かせる」//つまり 一気に空気に触れさせ熟成を進めて飲むための道具なの
Miyabi- This bottle’s a decanter and it ‘lets the wine open’.// It’s basically for letting the air touch and mature the wine at once to drink it.

今あたしは同じようにこの2つのワインをデキャンタに移した
Just now I poured both of these wines in the same way into the decanters.
すると もともと活きのよくない’00年は開けた直後はまあ何とか飲めたけど//デキャンタージュしたことで熟成というより酸化が進んでと年老いてしまい/かえって香りもコクも花がしぼむように劣化してしまった
After opening the ’00 wine, which from the start wasn’t very lively, we could somewhat drink it.// But the decanting, which more oxidized and aged it rather than matured it,// even more so made the aroma, the body, the bouquet, kind of wither and go bad.
逆にこっちの’99年物は葡萄の出来がよくもともと高いポテンシャルを持っていたからこそ/開けた直後ワインが「閉じた状態」でイマイチに思えた//ところが今はデキャンタージュによって花開き/本来のワインのおいしさを充分に楽しめる状態になったってわけ
In just the opposite way, since this ’99 wine was made from good grapes and originally had high potential,/ right after opening it the wine was ‘closed’ and you didn’t think much of it.// But from the decanting, the flowers opened/ and you could fully enjoy the original flavor of the wine.
でもこれは中級ワインだからあたしの下手なデキャンタージュでも開いてくれたけど/もっとレベルの高いワインだと一筋縄ではいかない―
Still, since it’s a second grade wine it opened with my clumsy decanting./ But nicer wines are much tougher to handle―

Kiriyu- It’s from Burgundy in France,//a village named Vosne-Romanee. It’s a Richebourg.

先生が大学を出られて初めて訪れたかの国で/ふらりと立ち寄ったドメーヌでこれを飲み//ワインの素晴らしさにめざめたというお話は私も先生の著書で読んだ覚えがあります
I remember reading in Mister Kanzaki’s book that/ after he finished university, maybe in the first country he had ever visited,// he wondered across a domaine and drank this. His eyes were then opened to the magnificence of wine.
造り手は/アンリ・ジャイエ……?
Shizuku- The maker is/ Henri Jayer……?
ブルゴーニュワインの神様といわれている人ですわ
Kiriyu- He is said to be the Burgundy god of wine.
今はもう80代で引退しているようですが//当時はまだジャイエも40代で一番脂の乗っていた頃でしょう
He’s already in his 80’s now and retired,// but at that time Jayer was still in his 40’s and was probably at his peak.

A note about some of the names:
Kanzaki Yutaka: The characters for Kanzaki mean ‘god and blossom’. The characters for Yutaka means ‘abundant aromas’.
Kanzaki Shizuku: Like his father, his last name is ‘god and blossom’. His first name, Shizuku, means ‘drops’.
Shinohara Miyabi: Her last name means ‘purple field’. The characters for her first name haven’t been given, but ‘miyabi’ means someone that has refined/sophisticated senses and often understands and reaches peoples hearts, especially about love.
